Sauce
  • 2 teaspoons cornstarch
  • 3 tablespoons reduced-sodium soy sauce

  • 1 bunch green onions
  • 2 teaspoons ginger

  • 2-1/2 cups frozen veggies see note 1
  • 2 (7.1-ounce) packets udon noodles see note 2

Instructions

  1. In a small bowl, whisk together cornstarch and soy sauce until completely smooth. Then, add the remaining sauce ingredients and whisk again. Set this mixture aside. Meanwhile, bring a large pot of water to a boil (do not salt the water).
  2. Heat 1 tablespoon of sesame oil in a large pan or wok over high heat. Once the oil is shimmering and hot, add the ground turkey. Allow the turkey to sear and brown for about a minute before breaking it apart with a wooden spoon. Continue to cook, crumbling the meat, until it’s fully browned. While the turkey cooks, thinly slice the entire bunch of green onions and finely mince the garlic and ginger.
  3. Add the minced garlic, ginger, and 1/2 cup of the thinly sliced green onions (reserving the rest, approximately 28g, for garnish) to the browned turkey in the pan. Sauté for 1 minute until fragrant. Next, add the frozen vegetables. Continue to sauté, stirring occasionally, until the vegetables are tender and thoroughly thawed, which should take about 2-4 minutes.
  4. By this point, your pot of water should be boiling vigorously. Remove the pot from the heat and carefully add the packets of udon noodles. Let them sit in the hot water for exactly 1 minute. Promptly drain the noodles and shake off any excess water – do not rinse them. To prevent sticking, use tongs to toss the hot noodles with a swirl (about 1 tablespoon) of vegetable oil.
  5. Add the prepared udon noodles and the stir-fry sauce (give the sauce another quick stir before adding) to the pan with the meat and vegetables. Let the mixture stand for a minute or two to allow the noodles to slightly caramelize and absorb the flavors. Then, toss everything together with tongs until the sauce thickens and beautifully coats all the ingredients. Remove the pan from the heat.
