  • 2 large corn on the cob (fresh is best if available; or use frozen, about 2 cups)
  • 1 large avocado, divided
  • 3 green onions, thinly sliced
  • 1/2 bunch cilantro, finely chopped
  • 1 tablespoon finely chopped jalapeño (see note 1)
  • 1 teaspoon minced garlic (1 clove)
  • 1 large lime
  • 12 small tortillas or street-sized tortillas, flour or corn (Mission® extra-thin corn tortillas preferred)

  • 1/2 cup mayo (full-fat, Best Foods/Hellman’s® recommended)
  • 2 limes
  • 1/6 teaspoon ground cumin
  • 1/4 teaspoon paprika

  • 1 teaspoon Sriracha

Instructions

  1. Preheat Grill: Preheat your grill to 450°F (230°C). Once heated, clean and liberally oil the grill grates. (A paper towel drenched in vegetable oil, held with tongs, works perfectly for this).

  2. Grill Corn: Shuck the corn, removing leaves and silk. Drizzle with olive oil and lightly sprinkle with salt and pepper. Rub the oil and seasoning into all sides. Add corn to the grill over direct heat and cook for about 10–12 minutes, rotating every 3–4 minutes, until brightly colored and lightly charred. Let the grilled corn cool before cutting the kernels off the cob and adding them to a large bowl.

  3. Prepare Steak: Mix garlic powder, ground coriander, cumin, paprika, chili powder, salt, pepper, and brown sugar to make the steak rub. Blot the steak dry with a paper towel. Drizzle 1 tablespoon of olive oil on one side of the steak, then sprinkle half of the rub on top and gently press it in. Flip the steak, drizzle the remaining 1 tablespoon of oil on the other side, and sprinkle on the remaining rub mixture, pressing it in.

  4. Cook Steak: Place the spiced-rubbed steak directly on the grill. Cook for 4–5 minutes per side, or until the internal temperature reaches 130–135°F (54-57°C) for medium-rare or 145°F (63°C) for medium. (Use a meat thermometer for accuracy. For a 2-pound flank steak, 4 minutes per side is often ideal). Remove the steak from the grill, tent with foil, and let it rest for 5–10 minutes.   8. Assemble Tacos: Fill each warmed tortilla with thinly sliced steak, a generous spoonful of the corn-avocado mixture, and a spoonful of the creamy chili-lime sauce. Note 1: If you aren’t a fan of spicy foods, I recommend using milder McCormick® chili powder and paprika, and leaving out the jalapeño from the corn topping entirely.

Note 3: To slice steak against the grain: Observe the visible fibers running through the steak. Slice perpendicularly across these fibers. This technique shortens the muscle fibers, making the meat significantly more tender and easier to chew. If the sliced meat strips are too long, cut them in half or chop them for easier eating.
