The cooker will take approximately 15–20 minutes to reach full pressure. Once the cooking cycle is complete, allow for a natural pressure release for 25 minutes (set a timer to avoid forgetting!). After 25 minutes, carefully quick-release any remaining pressure manually.

  • Carefully remove the lid and taste the beans. At this stage, I often add another 1 teaspoon of salt, depending on the saltiness of the stock used; add slowly and taste until the flavors truly sing. Carefully remove and discard the chipotle peppers (they will continue to add heat if left in the beans) and the bay leaf. If desired, stir in the fresh chopped cilantro and squeeze in fresh lime juice to brighten the flavors.
