  • 1 grapefruit
  • 2 navel oranges
  • 1 large ripe avocado diced
  • 1 (3-ounce) packet dried cranberries and honey-roasted almonds or 1/2 cup each of cranberries and almonds
  • Goat cheese or feta cheese, optional, add to preference
Dressing
  • 1/3 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon-style mustard
  • 3 tablespoons balsamic vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  • Dressing: Combine all dressing ingredients in a mason jar. Shake well to mix thoroughly; stir if honey settles at the bottom. Store the dressing in the fridge until you’re ready to use it. Remember to shake again vigorously before drizzling over your salad.

  • Using a sharp serrated knife, slice off the top and bottom ends of the grapefruit and oranges to create flat surfaces. Place each fruit flat on a cutting board. Carefully slice downwards, following the curve of the fruit, to remove all of the peel and white pith. Thinly slice the peeled fruit, then cut these slices into smaller, bite-sized pieces and add them to the large salad bowl.
  • Add the prepared quinoa or couscous (if using) to the bowl with the marinated kale. Incorporate the grapefruit, oranges, diced avocado, dried cranberries, and honey-roasted almonds. Drizzle with additional dressing to taste (you may not need all of it) and gently toss all the ingredients together to combine. If desired, sprinkle with goat cheese or feta cheese before serving immediately.
