  • 3 teaspoons honey
  • 1/2 tablespoon Dijon-style mustard
  • 1/4 cup olive oil
  • 1/4 teaspoon ground cumin

Instructions 

  • Peel and grate the carrots using the large holes of a box grater or a food processor fitted with a grating attachment. Aim for about 5 gently packed cups of finely grated carrots. Transfer the grated carrots to a large mixing bowl.
  • Add the finely diced shallots and finely chopped fresh parsley to the bowl with the carrots.
  • For the dressing, zest one large lemon to get 1/4 teaspoon of zest and then juice it to yield approximately 2 tablespoons of fresh lemon juice. In a wide-mouth glass jar or a small bowl, combine the lemon zest, lemon juice, honey, Dijon-style mustard, olive oil, and ground cumin. Season to taste with salt and pepper (I recommend starting with 1/2 teaspoon salt and 1/4 teaspoon pepper).
