- Add 2 leveled cups of old-fashioned oats to a large, powerful blender or food processor. Blend until the oats are transformed into a fine flour-like powder, approximately 60–90 seconds. If needed, stop, stir, and continue blending to break up any larger oat chunks.
- Remove the pits from the Medjool dates and coarsely chop them. Measure to ensure you have approximately 3/4 cup of chopped dates. Add these to the blender, on top of the oat flour. Pour the measured melted coconut oil over the dates. Blend for about 60 seconds, pausing to scrape down the sides as necessary to ensure even blending.
- Add all remaining ingredients (maple syrup, eggs, salt, baking soda, baking powder, cinnamon, ginger, nutmeg, and vanilla extract) to the blender, except for the grated carrots. Blend until the mixture is completely smooth, about 60–90 seconds. Finally, add the grated carrots and stir them into the mixture. Blend once more for about 30 seconds, or until the carrots are well broken down and fully integrated into the batter. Continue to stop and scrape down the blender sides as needed throughout this process.
- The batter will be thick and sticky, which is normal. Carefully divide every bit of this batter evenly among the 12 greased muffin cups, filling each approximately 3/4 full. Use a clean finger or the back of a spoon to gently smooth the tops of the muffins.
- Bake for 21–25 minutes, or until the tops are golden brown, no longer appear gooey or wet, and the sides are lightly browned. Remove the pan from the oven and let the muffins stand in the pan for 3–4 minutes before gently removing them. You can use the tines of a fork to carefully coax them out. Transfer the muffins to a cooling rack to finish cooling completely.
