Mastering Italian Couscous Salad for Effortless Meal Prep
Preparing this Italian Couscous Salad for meal prep is straightforward and incredibly rewarding, saving you precious time during the week. The key to successful meal prepping with salads, especially those with dressings, is intelligent storage. Here’s a detailed guide to ensure your salad stays fresh and delicious from Monday to Friday:
- Gather Your Containers: You’ll need six equally sized meal prep containers for the salad components and six smaller, sealable containers specifically for the dressing. Storing the dressing separately is crucial; it prevents the couscous and vegetables from becoming soggy, ensuring a crisp and vibrant salad every time you enjoy it. Small dressing cups, tiny Tupperware, or even snack-sized plastic bags work perfectly.
- Prepare the Couscous First: Begin by cooking the couscous according to the package directions. If you’re using plain couscous, infuse it with flavor by adding a few teaspoons of your favorite seasonings such as salt, pepper, Italian herbs, or garlic powder to the cooking water. Let it cool completely before mixing with other ingredients.
- Chop the Veggies with Care: While the couscous is simmering, start prepping your fresh vegetables. This salad calls for fresh basil, juicy cherry tomatoes, crisp green bell pepper, and briny olives. Coarsely chop these ingredients, ensuring they are roughly the same size for a consistent texture. Divide them equally among your six meal prep containers. This is also the time to chop your Genoa salami and cut the bocconcini (small mozzarella balls) into bite-sized pieces. Feel free to customize these vegetables based on your preferences – red onion, cucumber, or sun-dried tomatoes would also be fantastic additions!
- Craft the Flavorful Dressing: The dressing for this salad is a symphony of flavors and well worth the minimal effort. Simply combine all the dressing ingredients in a mason jar or a sealable bottle. Secure the lid tightly and shake vigorously until all components are thoroughly combined and emulsified. Taste and adjust seasoning as needed, adding more salt and pepper to your personal preference.
- Choose Your Protein: This recipe uses chickpeas and salami as the primary protein sources, offering a delightful contrast in texture and flavor. If you wish to add a crispy element, you can roast the drained chickpeas with a drizzle of olive oil and your favorite seasonings (or just salt and pepper) until golden and crunchy. For a completely vegetarian Italian Couscous Salad, simply omit the salami and consider adding an extra can of beans, such as kidney beans or cannellini beans, which would be equally delicious and satisfying. Cooked lentils or crumbled feta cheese are also excellent vegetarian protein boosts.
- Assemble and Finish: Once all components are prepped and cooled, assemble your meal prep containers. Divide the cooked couscous evenly, then layer in equal portions of the chopped veggies, salami (if using), fresh basil, and chickpeas. On top of each container, place a fresh lemon wedge and a small pinch of freshly cracked salt and pepper. When you’re ready to enjoy, simply add the pre-portioned dressing, squeeze the lemon over your salad, give it a good stir, and savor!
By following these steps, you’ll have a week’s worth of healthy, flavorful, and convenient meals ready to grab and go, making healthy eating easier than ever.

Equipment
- Wide-mouth Mason Jar or other sealable container for dressing
- 6 Meal Prep Containers
- 6 Small Dressing Containers
Ingredients
Salad
- 2 (4.7-ounce) packages Roasted Garlic and Olive Oil Couscous (we recommend Near East brand)
- 1 (15-ounce) can chickpeas (also called Garbanzo beans, drained)
- 5 ounces Genoa salami (coarsely chopped)
- 5 ounces Mozzarella cheese (we use Bocconcini, chopped into bite-sized pieces)
- 1 large green bell pepper (coarsely chopped)
- 5 ounces black olives (sliced or halved)
- 2 cups cherry tomatoes (sliced or halved depending on size)
- 3/4 cup fresh basil (chiffonade)
Dressing
- 1/3 cup olive oil
- 1/3 cup red wine vinegar
- 1 tablespoon Dijon-style mustard
- 1 teaspoon honey
- 1 teaspoon minced garlic
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional, for a hint of heat)
- Salt and pepper (to taste)
Instructions
- Prepare Couscous: Cook the couscous according to package instructions. If using plain couscous, add a few teaspoons of your favorite seasonings (salt, pepper, Italian herbs, garlic powder, etc.) to taste during cooking. Allow it to cool completely.
- Prep Salad Components: While the couscous cools, drain the chickpeas (you can roast them for crispiness as described in the blog post if desired). Coarsely chop the Genoa salami. Cut the mozzarella (Bocconcini) into bite-sized pieces. Slice the green bell pepper into strips, then cut those strips in half or thirds. Slice or halve the black olives. Slice or halve the cherry tomatoes depending on their size. For the fresh basil, chiffonade it by stacking the leaves, rolling them tightly, and slicing perpendicular to the roll to create thin ribbons.
- Make the Dressing: Combine all dressing ingredients in a mason jar or other sealable container. Shake well until thoroughly combined and emulsified. Taste and season with salt and pepper to your preference (we usually add about 3/4 teaspoon salt and 1/2 teaspoon pepper).
- To Serve as a Single Salad: Add the cooled, prepared couscous to a large bowl. Incorporate all the chopped vegetables, salami (if using), fresh basil, and chickpeas. Add a squeeze of fresh lemon juice, season with salt and pepper to taste, and then drizzle with the prepared dressing. Only dress the portion you plan to consume immediately, as the salad is best when the dressing is added just before eating.
- To Meal Prep (6 Servings): Divide the prepared dressing evenly into six small, separate containers. Distribute the cooled couscous evenly among six meal prep containers. Then, add equal parts of all the chopped veggies, salami (if using), fresh basil, and chickpeas into each container. For each meal prep container, add a lemon wedge and a small pinch of salt and pepper on top. When ready to enjoy your meal, simply add the dressing, squeeze the lemon over your salad, stir everything together, and enjoy your fresh, healthy meal!
Recipe Notes
Storage: Store the leftover salad components (undressed) in an airtight container in the refrigerator for up to 3 days. Always keep the dressing separate to maintain optimal freshness and prevent the salad from becoming soggy. Dress just before eating.
