  • 1 large yellow onion, finely diced
  • 2 bell peppers, finely diced (e.g., 1 red and 1 yellow for color)
  • 1 tablespoon minced garlic
  • 1-1/2 cups grated carrot (from 2 to 3 large carrots), see note 2
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1-1/2 cups basmati rice, see note 3
  • 2-1/2 cups chicken stock (like Swanson’s)
  • 1 cup frozen corn
  • 1 cup frozen peas
  • freshly grated Parmesan cheese (optional, for serving), see note 4

Instructions

  • Heat 1 tablespoon of olive oil in a large, nonstick pot over medium-high heat. Add the prepared coined sausages (see note 1 for details on preparation) and cook, stirring and flipping occasionally with a wooden spoon, until they are beautifully golden brown and nicely seared on the outside. While the sausage browns, season lightly with salt and pepper (approximately 3/4 teaspoon salt and 1/4 teaspoon pepper). Once browned, use a slotted spoon to transfer the cooked sausages to a paper-towel-lined plate. Leave any rendered oil or grease in the pan, unless it exceeds 2 tablespoons, in which case drain off the excess. If no grease remains, add 2 additional tablespoons of olive oil to the pot.
  • Maintain the heat at medium-high. Add the finely diced onion, diced bell peppers, and minced garlic to the same pot. Sauté the vegetables, stirring occasionally, for 7–10 minutes, or until they have softened and become tender and fragrant. This step builds a flavorful base for the dish.
  • Stir in the grated carrots, basmati rice, and all the dried seasonings (basil, thyme, oregano, paprika, onion powder, and garlic powder). Sauté, stirring constantly, for 1 minute to toast the rice and bloom the spices, enhancing their flavor. Pour in the chicken stock and stir thoroughly to combine all ingredients. Ensure all the rice is submerged beneath the liquid. Bring the mixture to a rolling boil, then immediately reduce the heat to low to achieve a very gentle simmer. Carefully arrange the browned sausage coins in a single layer on top of the rice and liquid mixture.
  • Cover the pot tightly with a fitted lid and allow it to cook undisturbed for 17–20 minutes, or until all the liquid has been fully absorbed into the dish and the rice is perfectly tender. (Troubleshooting Tip: If the liquid has absorbed but the rice is still a bit firm, add a few more tablespoons of chicken stock or water, then re-cover and continue cooking for a few more minutes. If there’s too much liquid remaining, slightly increase the heat and cook uncovered for a moment or two until absorbed.) Once cooked, keep the lid on the pot, remove it from the heat, and resist the urge to stir just yet.
  • Working quickly to minimize heat loss, carefully remove the lid and evenly sprinkle the frozen peas and corn over the top of the rice and sausage (do not stir them in at this stage). Immediately replace the lid securely. Let the pot stand, completely undisturbed, for a full 10 minutes. This crucial resting period allows the rice to steam further, achieving maximum fluffiness, and gently cooks the frozen vegetables to perfection using the residual heat, preventing them from becoming mushy. Do not rush this step!
  • Finally, remove the lid. If using, sprinkle with fresh chopped parsley for a burst of color and freshness. Use a fork to gently fluff the rice, incorporating all the ingredients together. There’s absolutely no need to meticulously shape them into perfectly round balls—these rustic slices will work wonderfully, offering fantastic flavor and texture to the dish!

Note 2: Grating Carrots
To prepare the carrots, first peel them thoroughly. Then, use the large holes of a box grater or a food processor with a grating attachment to grate them. Measure the grated carrots to ensure you have 1-1/2 cups for the recipe. This fine grating helps them blend seamlessly into the dish and cook quickly.
