  • 1 pound lean ground turkey 93/7
  • 1/2 cup tomato sauce
  • 3/4 cup black beans drained and rinsed
  • 3/4 cup corn thawed if frozen
  • 1 head Boston lettuce or romaine lettuce (for wraps) or cooked rice (for serving)
  • Cilantro-lime sauce for serving (see Note 1)

Seasoning Mix
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1-1/2 teaspoon beef bouillon powder (see Note 3)

Instructions

  1. If you are preparing wraps, gently wash and thoroughly dry individual lettuce leaves, allowing them to fully air-dry while you prepare the filling. If serving over rice, start preparing your rice according to package directions.
  2. Heat the olive oil in a large cast-iron pan over medium-high heat. Once the oil is hot and shimmering, add the finely diced carrots and red pepper. Sauté, stirring occasionally, for about 5 minutes, or until the vegetables begin to soften. Push the softened vegetables to the edges of the pan, creating a space in the center. Add the lean ground turkey to the center and sprinkle all the listed seasonings from the “Seasoning Mix” over it.
  3. Break the ground turkey into small, uniform pieces with a spoon or spatula and cook until it is no longer pink, which typically takes about 5–8 minutes. As the meat cooks and crumbles, incorporate the sautéed vegetables into the mixture. Stir in the tomato sauce, black beans, and corn. Make sure to scrape the bottom of the pan to release any flavorful browned bits – this is where much of the rich taste resides! Allow the mixture to simmer gently for another 3–5 minutes, or until it is fully cooked through and the flavors have melded beautifully. Remove from heat and let it cool slightly.
