From the Chef’s Kitchen: A Note on This Recipe

As a lover of both creamy and broth-based soups, I’m always searching for ways to combine comforting flavors with ease. My creamy soup obsession (I have shared dozens over the years!) started years ago, and now I’m trying to expand into broth-based options, especially when I need a filling meal.

That’s where my enduring love for classic lemon chicken orzo soup comes in. This dish is frequently on my table because it’s satisfying, intensely flavorful, and wonderfully refreshing, all thanks to the vibrant lemon notes.

The inspiration for this one-pot wonder struck when I craved those same delicious flavors but wanted a heartier, more substantial meal. After several test runs, this version emerged as the clear winner. The lemon provides a zesty brightness, the pasta and chicken add satisfying substance, and the creamy base ties everything together beautifully. The best part? It all cooks in a single pot, making it incredibly convenient and exceptionally delicious.

Lemon Chicken Orzo: Essential Ingredients

Before you begin, gather these key ingredients. Quality ingredients ensure the best flavor in the final dish.

Ingredient Tip
Chicken Use chicken breast or tenders, cut into small, uniform pieces. This ensures quick and even cooking, resulting in tender, juicy chicken.
Onion & Garlic Dice the onion and mince the garlic very finely. This allows them to blend seamlessly into the sauce, adding flavor without any unwanted crunch.
Orzo Stir the orzo frequently, especially towards the end of the cooking process. This prevents sticking and ensures it cooks evenly, absorbing the creamy sauce.
Broth, Milk & Butter Allow the milk to come to room temperature before adding it to the pot. This helps it incorporate more smoothly, preventing the sauce from curdling. Use good quality chicken broth to enhance the overall flavor profile. Real butter is always better!
Lemon, Parmesan & Spinach Stir in the lemon juice and zest, grated Parmesan cheese, and fresh spinach at the very end of cooking. This preserves their fresh flavors and prevents the spinach from overcooking. Freshly grated parmesan will melt into a lovely cream.

Sautéing onion, garlic, and chicken

Step-by-Step Guide: Cooking Lemon Chicken Orzo

Follow these simple steps to create the perfect Lemon Chicken Orzo. The one-pot method streamlines the cooking process, making it ideal for busy weeknights.

  1. Sauté the Chicken: Begin by sautéing diced onion and minced garlic in a large pot until softened and fragrant. Add the diced chicken and cook until it’s lightly browned and cooked through. Remove the chicken mixture from the pot and set aside. Season chicken with salt, pepper and Italian seasoning.
  2. Create the Creamy Base: In the same pot, melt butter and then whisk in flour to create a roux. Gradually whisk in chicken broth and milk, ensuring a smooth sauce. Bring to a simmer, stirring constantly to prevent lumps.
  3. Cook the Orzo: Add the uncooked orzo pasta to the creamy sauce. Simmer until the orzo is tender and has absorbed most of the liquid. Stir regularly to prevent sticking. This process typically takes about 10-15 minutes.
  4. Final Touches and Serving: Stir the cooked chicken, fresh spinach, grated Parmesan cheese, lemon zest, and lemon juice into the orzo mixture. Cook until the spinach wilts and the cheese melts into the sauce, creating a rich, creamy texture. Season with salt and pepper to taste. Serve warm, garnished with additional Parmesan cheese and a lemon wedge.

Storage Instructions for Lemon Chicken Orzo

This Lemon Chicken Orzo is best enjoyed fresh when the sauce is at its peak creaminess. However, leftovers can be stored for later enjoyment. The lemon chicken and orzo leftovers are great the next day, but it will continue to absorb the sauce as it sits.

  • For Leftovers: Store the cooled orzo in an airtight container in the refrigerator for up to 3 days. Keep in mind that the orzo will continue to absorb the sauce as it sits, so it may become drier over time.
  • Reheating: When reheating, add a splash of milk or chicken broth to restore the creamy consistency. Reheat gently on the stovetop or in the microwave, stirring frequently to ensure even heating.

Lemon Chicken Orzo Recipe brings seasoned chicken, tender pasta, and fresh lemon together in one pot for a dinner you’re gonna want on repeat!

  • Prep Time: 20 minutes
  • Cook Time: 10 minutes
  • Total Time: 30 minutes
  • Servings: 4

Ingredients

  • 2 tablespoons olive oil
  • 1 cup finely diced yellow onion (1 onion)
  • 2 teaspoons finely minced garlic
  • 1 large (12 ounces) chicken breast or tenders, diced to 1/2-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 teaspoons Italian seasoning
  • 2 cups chicken broth
  • 2-1/4 cups whole milk (see note 1)
  • 1-1/2 cups uncooked orzo pasta (see note 2)
  • 1 cup finely grated Parmesan cheese, divided (see note 3)
  • 3 cups coarsely chopped baby spinach
  • 2 large lemons (1 tbsp zest and 1/4 cup juice)
  • 1 teaspoon Dijon-style mustard (optional)

Instructions

  1. Measure the milk and set it aside to come to room temp. Dice onion, mince garlic, and chop chicken into 1/2-inch pieces. Coarsely chop spinach.
  2. Heat oil in a large, nonstick pot over medium-high heat. Add the diced onion and cook, stirring occasionally, for 5 minutes until golden. Add garlic and cook for 30 seconds. Add the diced chicken, season with salt and pepper, and cook for 5–7 minutes until chicken is cooked through. Transfer the mixture to a bowl, cover with foil, and set aside.
  3. In the same pot, melt butter over medium heat, then add flour, whisking constantly for 1 minute. Whisk in the Italian seasoning. Gradually whisk in the chicken stock, followed by the milk, stirring until smooth. Add the uncooked orzo and stir.
  4. Turn the heat to high and bring the mixture to a simmer. Once bubbling, lower the heat to maintain a gentle simmer. Cook for 7–10 minutes, stirring occasionally and more toward the end of cooking. The orzo should be almost tender and the mixture still slightly soupy after 7–10 minutes.
  5. Add the cooked chicken, spinach, 3/4 cup Parmesan, Dijon mustard (if using), 1 tbsp lemon zest & 1/4 cup juice to the pot. Stir to melt the cheese and wilt the spinach. Taste and adjust seasoning with additional salt and pepper if needed.
  6. The consistency should be creamy, like risotto. If it’s too thick, add a little milk to thin it out. Serve right away and top each bowl with the remaining 1/4 cup Parmesan. Enjoy while it’s hot!

Recipe Notes

  • Note 1: Whole milk is essential for a thick and creamy texture. Lower-fat milk won’t achieve the same result.
  • Note 2: Orzo is a small pasta, not a grain (don’t use rice!). Be sure to use 1-1/2 cups and not the whole box. Quality of Orzo can differ quite a bit brand to brand; I like DeLallo or Barilla.
  • Note 3: Grab a block of Parmesan and grate it on the small holes of a grater. Avoid using pre-grated Parmesan from a can as it’s too salty and won’t melt as smoothly.
  • Storage: This dish is best fresh, but if you need to store it, let it cool and keep it in an airtight container in the fridge for up to 3 days. When reheating, add a little milk or broth to make it creamy again.

Customize Your Lemon Chicken Orzo

One of the best things about this recipe is how easy it is to adapt to your preferences. Feel free to experiment with different ingredients and flavor combinations to create your own signature version.

  • Add More Greens: Stir in extra spinach, kale, or arugula for an extra boost of nutrients.
  • Use Chicken Thighs: Replace chicken breasts with chicken thighs for a richer, more intense flavor.
  • Incorporate Vegetables: Sauté mushrooms, zucchini, or bell peppers along with the onion and garlic for added texture and flavor.
  • Garnish with Fresh Herbs: Finish the dish with a sprinkle of fresh parsley, basil, or a dollop of pesto for a burst of herbal freshness.
