The Story Behind This Amazing Lava Cake Recipe
This recipe wasn’t born in a test kitchen; it originated from a simple Christmas request. My husband, a huge fan of Chili’s Lava Cake, added “Homemade Chili’s lava cakes” to his wish list. That challenge launched me on a delicious quest to recreate this beloved dessert.
Countless batches and adjustments later, I finally nailed the perfect recipe. The first taste-testers? Our guests on Christmas Eve. They loved it, especially my eldest son, who declared it the best thing he’d ever eaten. Word spread like wildfire, and soon, I was baking lava cakes for his friends and their baseball team!
After countless batches and tweaks, I’m confident in saying this recipe is better than the original Chili’s version. So, get ready to impress your family and friends with this incredibly decadent and easy-to-make dessert!

What You Need: Key Ingredients for the Perfect Lava Cake
The secret to a truly exceptional lava cake lies in the quality of the ingredients. Here’s a breakdown of what you’ll need:
- Semi-Sweet Chocolate: Opt for high-quality chocolate bars. Since chocolate is the star of the show, the better the chocolate, the better the flavor.
- Unsalted Butter: We’ll melt most of the butter with the chocolate for a smooth batter. The remaining butter is crucial for greasing the muffin tin, ensuring easy release of the cakes.
- Eggs and Egg Yolks: Room temperature eggs and egg yolks create a smoother, silkier batter. Take them out of the refrigerator about 30 minutes before you start baking.
- Brown Sugar and Vanilla: Use fresh, soft light brown sugar. Whisk it well into the egg mixture to ensure it fully dissolves. A touch of vanilla extract enhances the chocolate flavor.
- All-Purpose Flour and Salt: Whisk the flour and salt in gently, just until combined, to keep the cakes tender. Salt balances the sweetness of the chocolate.
- Lindt Chocolate Truffles (or similar): These are the secret to the molten center. Milk chocolate Lindt truffles work great, but experiment with dark chocolate or other flavors!
Quick Tip: For an extra-gooey center, I highly recommend using Lindt chocolate truffles. I’ve tested many options, and they consistently deliver the best molten core.

Step-by-Step Guide: How to Make Chili’s Lava Cake at Home
This recipe is surprisingly easy to follow. Here’s a step-by-step guide to creating your own molten chocolate masterpieces:
- Melt and Cool: Combine the chocolate and butter in a microwave-safe bowl. Melt in 30-second intervals, stirring in between, until smooth. Let the mixture cool slightly while you prepare the other ingredients.
- Whisk the Base: In a separate bowl, whisk together the eggs, egg yolks, and brown sugar until the mixture is smooth and slightly thickened. This creates the foundation for a rich and decadent cake.
- Combine Everything: Gradually whisk the melted chocolate mixture into the egg mixture until well combined. Gently whisk in the flour and salt until just combined. Avoid overmixing, which can lead to a tough cake.
- Prepare the Pans: Generously grease a muffin tin with butter. Dust the greased tin with cocoa powder to prevent sticking and add an extra layer of chocolate flavor.
- Fill and Center: Fill each muffin cup about 1/3 of the way with the batter. Place a Lindt chocolate truffle in the center of each cup. Top with the remaining batter, ensuring the truffle is completely covered.
- Bake to Perfection: Bake in a preheated oven at 400°F (200°C) for 16-17 minutes, or until the edges of the cakes are set but the centers are still slightly soft.
- Release and Serve: Let the cakes cool in the muffin tin for just 2 minutes before inverting them onto a plate. The molten centers will continue to cook if left in the tin for too long. Serve immediately with your favorite toppings!
Top It Off: Delicious Topping Ideas for Your Lava Cake
Chili’s has perfected their lava cake presentation with vanilla ice cream, chocolate shell, and a caramel drizzle. Here are some of my favorite ways to elevate these lava cakes at home:
- Vanilla Bean Ice Cream: The classic pairing! The cold ice cream complements the warm cake perfectly.
- Magic Shell or Chocolate Sauce: Add a crackly chocolate finish with magic shell or a drizzle of your favorite chocolate sauce.
- Fresh Berries: Strawberries and raspberries add a pop of color and a touch of tartness that cuts through the richness of the cake.
- Whipped Cream: For a lighter option, top with a dollop of freshly whipped cream instead of ice cream.
- Salted Caramel Sauce: A drizzle of salted caramel sauce adds a delightful sweet and salty contrast.

Essential Tools for Lava Cake Success
Having the right tools can make all the difference in the kitchen. These are my go-to essentials for making perfect lava cakes:
- Muffin Tin: A good quality muffin tin is essential for clean release. I highly recommend this muffin tin. It’s durable and makes releasing the cakes a breeze.
- Mixing Bowls: A set of sturdy mixing bowls is a must for any baker.
- Whisk: A good whisk is essential for creating a smooth batter.
- Microwave-Safe Bowl: For melting the chocolate and butter.
Storage Tips for Lava Cakes
Lava cakes are best served fresh and warm. However, if you have leftovers (unlikely!), let them cool completely, wrap them tightly in plastic wrap, and store them in an airtight container in the refrigerator for up to 2 days. To reheat, microwave gently until warmed through, but note that the centers may not be as molten as when freshly baked.

7 lava cakes
- 7 Lindt chocolates (or similar chocolate truffles)
- 5 ounces chopped semi-sweet chocolate (good quality)
- 8 tablespoons unsalted butter (divided)
- 2 large eggs (at room temperature)
- 2 large egg yolks
- 1/2 cup light brown sugar (gently packed, SOFT sugar)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons all-purpose flour
- Chop chocolate coarsely.
- Preheat the oven to 400°F. Cut butter into 8 tablespoons. Set aside 1 tablespoon and add the remaining 7 tablespoons to a large microwave-safe bowl with the chocolate. Microwave for 45 seconds then stir until smooth. Set aside to cool.
- In a large bowl add eggs and egg yolks. Let stand to get to room temperature. Add in brown sugar and whisk vigorously until smooth and slightly thickened, about 1 minute. Add in salt, vanilla, and cooled chocolate mixture. Whisk until smooth and combined. Add in flour and whisk until just combined. Do not over mix here, just about 30 seconds.
- Rub the remaining 1 tablespoon butter across 7 cavities of the muffin tin. I stick my hand in a plastic sandwich bag and rub the butter to really well coat the muffin tin. You should use all the butter and be sure to get the base of each cavity well. Sprinkle lightly with cocoa powder and then shake around to coat all of the muffin tin. Tap the muffin tin upside down over the sink to release any extra cocoa powder.
- Spoon batter into each of the 7 muffin cavities until about 1/3 full. Place an unwrapped Lindt ball into the center of each cavity. Top with more batter, dividing the rest evenly among the 7 cavities. Smooth the top with the back of a spoon or your finger.
- Bake for 16 to 17 minutes, or until the tops spring back when lightly pressed.
- Remove and let muffin tin stand for only 2 minutes. Then place a tray (larger than the muffin tin) on top of the cakes and flip over. Let stand for about 30 seconds then carefully pull up the muffin tin. The cakes should have all released nicely. Use a metal spatula to remove one cake at a time onto a plate. Immediately top with a scoop of vanilla ice cream and then some chocolate shell. Dig in while they’re hot and gooey!
