This Is The Best Cobb Salad I’ve Ever Had!
I’m a total salad person, but I only share ones I truly love. I test dressings and ingredient pairings until everything sings together—texture, flavor, and balance matter. When I travel or eat out, I often order salads as research. Many favorites start that way.
A few years ago I had a Cobb salad that stuck with me. It kept the classic Cobb feel but used a vinaigrette instead of a creamy dressing, swapped goat cheese for blue cheese, and added edamame in place of peas. I went home and recreated it—this recipe is the result.
You can use more classic Cobb toppings if you prefer, but this combination—herby vinaigrette, creamy avocado, salty bacon, tangy goat cheese, crisp lettuces and vegetables—is one I keep coming back to. I hope you enjoy it!

This Cobb Salad doesn’t store well once dressed. Keep the dressing and salad components separate and refrigerate in airtight containers for up to 3 days. Don’t dice the avocado until right before serving.

- 6 tablespoons red wine vinegar
- 1 tablespoon Dijon-style mustard
- 1 clove garlic
- 1 tablespoon finely chopped fresh flat-leaf parsley
- 1 tablespoon finely chopped fresh cilantro or basil
- 2-1/2 tablespoons granulated sugar
- 1/2 cup good-quality olive oil
- Salt and pepper, to taste
- 1 pound boneless, skinless chicken breasts plus 1/3 cup dressing (for marinating)
- 8 cups green leaf lettuce, coarsely chopped
- 2–3 hard-boiled eggs, peeled and diced or sliced
- 1/3 cup cooked, crumbled bacon (6–7 slices)
- 1/3 cup frozen shelled edamame or sweet peas, cooked
- 2/3 cup grape tomatoes, halved
- 1 large avocado, diced
- 1/2 cup corn (see Note 3)
- 1/2 cup goat cheese, feta, or blue cheese, crumbled
Instructions
- Shortcuts: Skip chicken, use rotisserie or leftover grilled chicken, use store-bought hard-boiled eggs, and microwave bacon for quicker prep.
- Make the dressing: Combine all dressing ingredients with 1/2 teaspoon each salt and pepper in a small blender. Blend until smooth, taste, and adjust seasoning or sugar as needed. Transfer to a jar and refrigerate. Shake before serving.
- Optional grilled chicken: Slice chicken breasts in half horizontally to make thinner cutlets. Place in a large plastic bag with 1/3 cup dressing, seal, and refrigerate 30 minutes to 4 hours. Grill over medium-high heat 4–5 minutes per side or until 160°F. Let rest 10 minutes, then slice or chop.
- Prep the salad: Dice or slice the eggs, crumble the bacon, cook and cool the edamame or peas, halve the tomatoes, dice the avocado, and prepare the corn.
- Assemble: Arrange lettuce on a large platter or in a bowl. Layer the cooled chicken (if using), eggs, bacon, edamame, tomatoes, avocado, corn, and cheese. Drizzle dressing just before serving. Do not dress portions you plan to store.
Recipe Notes
Note 1: If using grilled chicken, make the full dressing and reserve 1/3 cup for the marinade. If not using chicken, you can halve the dressing or make the full amount and refrigerate leftovers for up to 1 week.
Note 2: To hard-boil eggs: bring a pot of water to a boil, gently lower fridge-cold eggs in, reduce to a gentle boil, and cook 10 minutes. Transfer to an ice bath for 10 minutes, then peel under running water.
Note 3: To grill corn, cook until slightly charred, let cool, then cut the kernels off the cob and add to the salad for extra flavor.
Storage: Store dressing and toppings separately in airtight containers. Add dressing only to the portion you’ll eat immediately to keep the lettuce crisp. Slice avocado right before serving.
