Sauce
- Zest one lime (about 1/2 teaspoon zest) and juice both limes to yield about 4 tablespoons juice. In a bowl whisk together mayonnaise, lime juice, lime zest, Sriracha, and sugar. Season with a pinch of salt and pepper to taste. Refrigerate until serving so the flavors meld.
Fried Rice
- Prep the aromatics: dice onion, mince garlic and ginger. In a small bowl whisk together oyster sauce, bouillon powder, soy sauce, rice vinegar, sesame oil, and 1/4 teaspoon black pepper.
- Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Whisk the eggs lightly and pour into the skillet, swirling to form a thin layer. Let sit about 30 seconds, then gently push cooked egg to one side and allow uncooked egg to set. Break into pieces, transfer to a plate, and tent with foil.
