  • 3/4 cup chopped pecans (measured after toasting and chopping)
  • 3 to 4 extra-large overripe bananas see note below for measured amount
  • 1 cup + 2 tablespoons light brown sugar tightly packed, divided use
  • 2 large eggs
  • 1/3 cup full-fat honey vanilla Greek yogurt at room temperature
  • 1 tablespoon vanilla extract
  • 1/3 cup vegetable or canola oil

  • Mash the bananas: Peel and mash bananas in a small bowl with a fork until thick with a few small lumps. Measure the mash — you should have about 1 3/4 cups.
