Author’s Notes
Why I Created a Greek Version
My baked chicken thighs recipe has become one of my most requested dishes, and readers often ask how to adapt the seasoning for different flavors. I developed this Greek-seasoned version to bring bright, herb-forward Mediterranean notes to the same simple roasting method. It’s perfect for summer meals when you want bold flavor with minimal effort.
These Greek chicken thighs are versatile: pile them into gyros or pitas, add them to rice or grain bowls, or chop them for salads and tacos. They hold up well in the fridge, so I often make a batch at the start of the week for quick lunches and dinners.

Greek Chicken Thighs Ingredients
| Ingredient | Notes |
|---|---|
| Boneless, skinless chicken thighs | Choose thighs that are similar in size so they cook evenly. Pat them dry with paper towels for the best caramelized edges. |
| Olive oil & balsamic vinegar | The vinegar adds a bright, savory pop that balances the oil and herbs. Use a good-quality olive oil for best flavor. |
| Salt & pepper | Essential for seasoning. Adjust amounts to taste; salt enhances all the other flavors. |
| Garlic powder, onion powder & paprika | These provide a savory foundation and a touch of warmth. |
| Oregano, basil & dill | Dried oregano gives classic Greek character. Basil and a small amount of dill round out the herbal profile—crush dried herbs between your fingers to release more aroma. |

How to Use Greek Chicken Thighs
This roasted chicken is a very useful component to keep on hand. Sliced or chopped, it easily transforms into many meals: layer it into wraps with crisp vegetables and tzatziki, serve it over lemon rice or quinoa, or add it to a big green or grain salad topped with tomatoes, cucumbers, olives, and feta.
For an easy Mediterranean platter, arrange warm pita, the sliced chicken, tzatziki, and a simple cucumber-tomato salad for scooping. The chicken also pairs beautifully with roasted potatoes, steamed vegetables, or a bright Greek salad.
Storage
Store leftover Greek chicken thighs in an airtight container in the refrigerator for up to 5 days. Reheat gently in a skillet or microwave until warmed through. For longer storage, freeze cooked pieces for up to 2 months; thaw overnight in the fridge before reheating to preserve texture.

Equipment
- Rimmed sheet pan with foil
Ingredients
- 1 pound boneless, skinless chicken thighs (about 3–4 thighs)
- 4 teaspoons olive oil
- 2 teaspoons balsamic vinegar
- Salt and pepper (about 1 tsp salt & 1/2 tsp pepper, or to taste)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 3/4 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried dill (optional)
- 1 large lemon, cut into wedges
- Serving suggestions: warm pita, tzatziki, olives, tomatoes, cucumbers, feta, or lemon rice
Instructions
- Preheat the oven to 425°F (220°C). Line a large rimmed sheet pan with foil for easier cleanup. Pat the chicken thighs dry with paper towels; leaving a little fat is fine as it will render and help with browning.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, garlic powder, onion powder, paprika, oregano, basil, and dill if using. Rub or brush the mixture evenly over both sides of each thigh.
- Arrange the seasoned thighs on the prepared sheet pan, spacing them so air can circulate for even roasting. Bake on the center rack for 15 minutes.
- After the initial bake, move the oven rack about 8 inches from the broiler element and switch the oven to broil. Broil the thighs for 7–10 minutes until the tops are nicely browned, slightly charred, and caramelized. Watch closely to avoid burning.
- Remove the pan from the oven and brush the accumulated pan juices over the chicken. Squeeze fresh lemon juice over the thighs to brighten the flavors, then slice or chop the meat as desired. Serve with lemon wedges and your preferred sides.
Recipe Notes
Note 1: Select thighs of similar size for consistent cooking. Aim for about 1 pound total; if your thighs are particularly large, add a few minutes to the bake time. The internal temperature should reach 165°F (74°C).
Note 2: Dried dill is optional but adds a pleasant, herbaceous touch. Omit if you prefer a different herb profile.
Note 3: My favorite way to serve this chicken is over lemon rice with a cucumber-tomato salad, a dollop of tzatziki, and warm grilled pita for scooping. It’s also great tossed into salads, grain bowls, or wraps.
Storage: Refrigerate leftovers in an airtight container for up to 5 days or freeze for up to 2 months. Thaw overnight before reheating.
