- 1-1/2 teaspoons cornstarch
- 1 tablespoon unsalted butter
- 3/4 cup green onions, whites and light green parts, thinly sliced
- 2 teaspoons minced garlic
- 1/2 teaspoon ground cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 (4-ounce) can diced green chiles
- 1 (12-ounce) can evaporated milk
- 1/4 cup finely chopped cilantro (optional)
- Tortilla chips for dipping
Instructions
- Shred the cheese or coarsely chop if sliced. Measure 2-1/2 cups. Toss cheese with the cornstarch in a small bowl and set aside.
- Heat a medium pot over medium heat. Melt butter, add the sliced green onions, and cook 3–5 minutes until soft. Add the garlic and stir for 30 seconds.
- Drain the green chiles well. Add the chiles, cumin, onion powder, garlic powder, paprika, and salt and pepper to the pot. Cook 1–2 minutes until fragrant.
- Shake the can of evaporated milk and pour it into the pot. Stir and bring to a light simmer over medium heat. Reduce heat to medium-low; do not boil.
- Add the cornstarch-coated cheese and stir constantly on low until fully melted and smooth. The sauce may seem thin at first but will thicken as it cools. Taste with a tortilla chip and adjust seasoning. Stir in cilantro if using, remove from heat, and serve warm with chips.
- To keep queso creamy for serving, transfer to a small Crock-Pot set to warm and stir occasionally. If it thickens, rewarm gently on the stovetop or microwave in short bursts, adding a splash of evaporated milk while stirring if needed.
Recipe Notes
Note 1: White American cheese from the deli gives the classic smooth texture. If only sliced, ask the deli for the largest slices so you can shred or chop easily. A good substitute is sharp cheddar, though the texture will differ.
Note 2: Fire-roasted diced green chiles add extra smoky flavor, but plain diced chiles work fine. For more heat, add jalapeño or a hotter can of chiles.
Note 3: Evaporated milk (unsweetened, shelf-stable) helps prevent separation and gives the creamiest result. Do not use sweetened condensed milk.
