Season generously with salt and pepper to taste – we recommend starting with 1 teaspoon of salt and 1/2 teaspoon of pepper, then adjust as needed. Whisk these ingredients together until well combined. Add the cut carrots to the bowl and toss thoroughly until each piece is evenly coated. Transfer the coated carrots onto a large sheet pan, ensuring they are spread out in a single layer with ample space between them. After peeling and cutting them as directed, you should yield approximately 6 cups of carrots, which is the perfect amount for this salad.

Note 2: Expert Dressing Tips: Achieving the perfect dressing is all about fresh ingredients and proper technique. I highly recommend zesting your lemons and oranges using a fine grater (microplane) to get fine, aromatic zest. For juicing, this citrus juicer works wonders. Remember, when zesting any citrus, always target only the bright, colored outermost layer of the peel. It’s crucial to avoid grating into the white pith directly beneath the peel, as the pith is very bitter and can impart an unpleasant, sour taste to your delicate dressing, throwing off the entire flavor balance.

Note 3: Dressing Consistency: If your dressing is stored at colder temperatures in the refrigerator, it’s natural for the olive oil to solidify slightly and for the dressing to separate or form layers. This is perfectly normal and easily remedied. Simply remove the jar from the fridge and allow it to sit at room temperature for about 15 minutes. This will soften the oil. Then, give the jar a good, vigorous shake until the dressing is smooth, emulsified, and ready to pour.
