As a child, Cosmic Brownies were the ultimate treat. I’ve always loved chocolate and brownies, and the combination of a dense fudgy base topped with chocolate and tiny rainbow candies is timeless. They felt special because my mom didn’t buy them often.

These homemade Cosmic Brownies capture that nostalgia but improve on the original with real chocolate, a simple ganache, and quality ingredients. The result is dense, deeply chocolatey bars with melty pockets of chocolate inside and a smooth, shiny topping finished with rainbow chips or mini candies.

How To Make My Cosmic Brownies Recipe

  7. Top & set: Spread the ganache over the cooled brownies and immediately scatter rainbow candy chips or sprinkles on top so they stick. Refrigerate 1–2 hours until the topping is set.
  8. Serve: Lift the brownies from the pan using the parchment overhang. Cut with a sharp knife, wiping it clean between cuts, and serve chilled or at room temperature.

Don’t Over-Bake

  • 2/3 cup Dutch-process cocoa powder see note
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips divided

  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • Rainbow candy chips or sprinklesfor topping

Instructions

  • Preheat oven to 350°F. Grease an 8 x 8-inch metal pan and line with parchment paper, leaving an overhang for easy removal. Avoid foil or wax paper.
  • Whisk melted butter, granulated sugar, and brown sugar in a large bowl until smooth. Add eggs and vanilla and whisk until creamy.
  • Add flour, cocoa powder, and salt. Switch to a wooden spoon and stir until just combined. Stir in 1/2 cup mini chocolate chips. Do not overmix.
  • Scrape the batter into the prepared pan and smooth the top. Sprinkle the remaining 1/4 cup chocolate chips across the surface.
  • Bake 25–30 minutes, until just set to the touch. Centers should remain soft and fudgy. Let brownies cool completely before adding the topping.
  • Place chocolate chips in a heat-safe bowl. Heat the cream until it just begins to simmer, pour it over the chocolate, cover for 4 minutes, then stir until smooth. If needed, microwave in 15-second bursts, stirring until glossy.
  • Pour the ganache over the cooled brownies and spread evenly. Immediately sprinkle rainbow chips or sprinkles on top so they adhere.
