The Smash Taco Remix My Whole Family LOVES!

Smash burgers are one of the most-cooked meals in my house—easy, full of flavor, and broadly loved. Smash burger tacos have earned a regular spot in our rotation, so it made sense to try a Caesar salad version. Turning that familiar smash technique into Chicken Caesar Smashed Tacos was a hit: crisp edges, juicy seasoned chicken, and a cool crunchy salad piled on top. Ingredients

Tacos
  • 1 pound ground chicken (ground thighs if available)
  • 1 tablespoon roasted chicken base or similar chicken seasoning
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste (add salt only if needed)
  • Tiny pinch red pepper flakes (optional)
  • 6 flour tortillas, fajita-size
  • 1–2 tablespoons vegetable oil, if needed for stainless steel pans
Caesar Salad
  • 1 batch prepared Caesar salad with dressing (homemade or a Caesar salad kit)
  • Freshly grated Parmesan cheese for topping
  • 1 large lemon, cut into wedges (optional, for serving)

Instructions

  • Prepare the Caesar salad ingredients. If making the dressing from scratch, make it first and chill so the flavors meld. Chop, wash, and thoroughly dry the lettuce. Crush croutons into smaller pieces. Do not toss the entire salad with dressing until just before serving; if using a salad kit, wait to assemble until the tacos are nearly finished.
  • Heat the cooking surface. Preheat an electric griddle to 400°F or heat a cast-iron skillet over medium-high until very hot.
  • Season the chicken. In a medium bowl, combine the ground chicken, chicken base, Italian seasoning, black pepper, and red pepper flakes if using. Mix gently until combined—avoid overworking the meat.
  • Form the tacos. Divide the chicken mixture into six equal portions. Spread one portion in a very thin, even layer over one side of each tortilla, pressing the meat all the way to the edges.
  • Cook the chicken side. Lightly oil the pan if needed. Place the tortillas meat-side down on the hot griddle or skillet. Press each one firmly with a burger press or the bottom of a small saucepan for about 5 seconds. Cook for 3–4 minutes, until the chicken is deeply browned and cooked through to 160°F.
  • Crisp the tortillas. Cook an additional 30–60 seconds until the tortilla is lightly golden and crisp. Taste and add a small sprinkle of salt if desired. As each taco comes off the heat, gently fold it into a taco shape so it holds the salad. Avoid overcrowding—cook in batches for best browning.
  • Finish the salad. Toss only the amount of lettuce you will serve immediately with Caesar dressing, Parmesan, and crushed croutons. Keep any leftover lettuce and croutons undressed to stay fresh.
  • Assemble and serve. Top each crispy taco with a generous pile of Caesar salad, grate extra Parmesan over the top, and add freshly cracked black pepper. Serve immediately with lemon wedges and extra Caesar dressing for dipping.
