The Tacos That Took Over My House For Months!

I developed this recipe while preparing for a summer in London, and it quickly became one of my go‑to meals. I finished testing in April and, even before publishing it, I had already made these tacos more times than I can count.

When I filmed the recipe, my oldest had friends over and they devoured every taco on the tray. They immediately declared these their new favorite. After that day I made the tacos repeatedly so everyone who missed out could try them — they were requested again and again.

These are popular with adults, but the fact that a house full of teenagers kept asking for more says it all.

These Crispy Beef Tacos are packed with saucy, seasoned beef and melty Cheddar, plus a creamy cilantro‑lime sauce for dipping. They’re simple to make and perfect for feeding a crowd.

Ingredients

Taco Beef
  • 1 1/2 tablespoons olive oil
  • 1 pound lean ground beef (93/7)
  • 1 batch taco seasoning (see notes)
  • 1/2 cup mild picante sauce or salsa
  • 1 (16-ounce) can chili beans, undrained
  • 8 small flour tortillas, fajita-sized
  • 2 1/2 cups freshly shredded sharp Cheddar cheese, divided
  • 2–4 tablespoons vegetable oil, for shallow frying
  • Toppings as desired (see note 3)
Cilantro‑Lime Sauce
  • 2 to 3 large limes (about 1/4 cup juice, 1 teaspoon zest)
  • 1 teaspoon minced garlic
  • 1 cup loosely packed fresh cilantro
  • 1 tablespoon coarsely chopped jalapeño
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • Salt and pepper (about 1/2 teaspoon salt, 1/4 teaspoon pepper)

Instructions

  • Beef: Heat the olive oil in a large skillet over high heat. Add the ground beef and let it sear for about 30 seconds before breaking it apart. Cook, crumbling as it browns, and sprinkle in the taco seasoning. Once the beef is deeply browned and cooked through, reduce the heat to low. Stir in the picante sauce, scraping up any browned bits. Add the undrained chili beans and simmer 2–4 minutes, until the mixture has thickened. Remove from heat and let cool slightly.
  • Sauce: In a blender or small food processor, combine lime zest and juice, garlic, cilantro, jalapeño, mayonnaise, salt, and pepper. Blend until mostly smooth. Add the sour cream and blend again until creamy. Taste and adjust seasoning. Chill until ready to serve.
  • Assemble: Lay a tortilla flat. Sprinkle about 2 tablespoons of cheese over one half. Spoon a portion of beef filling on top, then add another 2 tablespoons of cheese. Fold the tortilla over and press gently to seal. Avoid overfilling so the tacos are easy to fry. Repeat with remaining tortillas.
  • Fry: Add enough vegetable oil to coat the bottom of a large skillet (about 2–4 tablespoons) and heat over medium. Working in batches, fry 2–3 tacos at a time, leaving space between each. Cook about 1 minute per side, or until deeply golden and crisp. Carefully flip using a spatula underneath and a fork on top to help keep them closed. Transfer to a wire rack set over a baking sheet. Add more oil between batches as needed.
  • Serve: Serve immediately with the cilantro‑lime sauce for dipping and any desired toppings.

Recipe Notes

Note 1: A store packet works, but a homemade blend is flavorful: 1 tablespoon ground chili powder, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1 teaspoon salt, and 1/2 teaspoon pepper.

Note 2: Chili beans are pinto or red beans in a mildly seasoned chili sauce. They add flavor and bulk without extra prep.

Note 3: Favorite toppings include avocado or guacamole, pico de gallo or diced tomatoes, sour cream, pickled onions, jalapeños, and crumbled Cotija.
