Remove the pot from heat and let the rice stand, still covered, for 10 minutes (or until the rest of your meal is ready). Fluff the rice gently with a fork and stir in 2 tablespoons of fresh lime juice. For the pickled shallots, thinly slice a small shallot into rings and place them in a small bowl. Add the rice vinegar and set aside, stirring occasionally to ensure even pickling.
  • Prep Remaining Ingredients: Mince your garlic and peel and mince fresh ginger until you have 1 packed teaspoon of each.
