  • 1 tablespoon olive oil
  • 1-1/2 cups finely diced red onion (about 1 large onion)
  • 1 red bell pepper diced
  • 1 pound ground turkey (93/7 lean, see Note 1 for selection tips)
  • Salt and pepper
  • 1 tablespoon ground chili powder
  • 1 tablespoon ground cumin
  • 3/4 teaspoon paprika
  • 3/4 teaspoon dried oregano
  • 1 tablespoon minced garlic
  • 1 (4-ounce) can mild diced green chiles drained
  • 3/4 cup mild green enchilada sauce (or 3/4 cup mild salsa verde, see Note 2)
  • 1 (15-ounce) can black beans drained and rinsed
  • 1-1/2 cups frozen corn (optional, but highly recommended for sweetness and texture)
  • 1-1/2 cups freshly shredded pepper Jack cheese (see Note 3 for cheese options)
  • 1 lime (optional, for fresh juice)
  • 1/4 cup finely chopped cilantro
  • Toppings as desired (see Note 4 for suggestions)

Instructions 

  • Sauté Vegetables: Place a large pot or Dutch oven over medium-high heat. Add the olive oil and allow it to heat up until shimmering. Once hot, add the finely diced red onion and red bell pepper to the pot. Sauté, stirring occasionally, until the vegetables begin to soften and become tender, which typically takes about 5–7 minutes. Push the cooked vegetables to the edges of the pot, creating a clear space in the center for the ground turkey.
  • Brown Turkey & Add Spices: Add the ground turkey to the center of the pot. Season it generously with salt and pepper (I usually start with 1/4 teaspoon of each here). Using a wooden spoon or spatula, crumble the ground turkey, breaking it down into small pieces as it cooks. Once the turkey is mostly cooked through and no longer pink (about 5–7 minutes), drain off any excess liquid or fat that has accumulated in the pot, if necessary. Now, stir in the chili powder, cumin, paprika, and dried oregano, along with additional salt and pepper to taste (I typically add 3/4 teaspoon salt and 1/4 teaspoon pepper at this stage for optimal seasoning). Add the minced garlic and cook, stirring constantly, for another 2–3 minutes until the spices are very fragrant.
  • Simmer & Melt Cheese: Add the drained green chiles and green enchilada sauce to the pot. Make sure to scrape the bottom of the pot with your spoon to release any browned bits, which are packed with flavor. Bring the mixture to a gentle simmer, then reduce the heat to low. Stir in the drained and rinsed black beans and the frozen corn. Continue to stir until all ingredients are warmed through, which should take about 3–4 minutes. If using, mix in 2 tablespoons of fresh lime juice and the chopped cilantro. Remove the pot from the heat. Evenly sprinkle the freshly shredded pepper Jack cheese over the entire surface of the skillet. Cover the pot with a lid (or aluminum foil if you don’t have a lid) and let it stand for 5–7 minutes, or until the cheese is beautifully melted and bubbly. Remove the lid and get ready to enjoy!
