Ingredients

Chicken

  • 1 pound boneless, skinless chicken breast
  • 3 tablespoons olive oil

Butternut Squash

  • 1 small butternut squash (approximately 1 1/2 pounds, peeled and cut into 1/2-inch thick slices)
  • 3 tablespoons olive oil
  • Salt and pepper to taste

For the Bowls

  • 1 cup brown rice (plus water, 1 tablespoon butter, and 1 teaspoon fine sea salt for cooking)
  • 2 cups thinly sliced kale
  • 1/2 cup dried sweetened cranberries
  • 1/4 cup sliced honey roasted almonds
  • 1/4 cup shaved Parmesan cheese

Honey Dijon Sauce

  • 3 tablespoons apple cider vinegar
  • 3 tablespoons Dijon-style mustard (not yellow mustard)
  • 3 tablespoons honey
  • 3 tablespoons mayo (regular, full fat recommended)
  • Salt and pepper to taste

Instructions

  1. Prepare brown rice according to package directions (see note 2).
  2. In a small bowl, stir together 3 tablespoons olive oil, 3 teaspoons chicken seasoning, and salt and pepper (I recommend 3/4 teaspoon salt and 1/2 teaspoon pepper, adjust to your preference). Set aside. If chicken breasts are large, slice them horizontally in half. Cover chicken with plastic wrap to prevent splatter. Using a meat mallet or the bottom of a frying pan, pound breasts to an even thickness (they don’t need to be flat, just uniform). Pat chicken dry with a paper towel. With a pastry brush or your hands, brush both sides of all the chicken pieces with the seasoning and oil blend. Set aside.
  3. Preheat grill to medium-high heat (400–450°F). Add chicken to a cleaned and greased grill (I rub grill grates with a vegetable-oil-drenched paper towel). Grill for 4–5 minutes per side, flipping halfway through, or until chicken registers an internal temperature of 160°F. Remove to a plate and tent loosely with foil. If desired, add an extra sprinkle of salt and/or chicken seasoning to the chicken breasts off the grill. Thinly slice or chop the cooked chicken breasts.
  4. Cut off both ends of the butternut squash and peel it. Using a very sharp knife, cut the squash into 1/2-inch thick slices. When you encounter the seeded section, use a paring knife to cut around the center and carefully press the seedy section out to remove. In a small bowl, combine 3 tablespoons olive oil with salt and pepper to taste (I typically add 1/4 teaspoon of each). Use a pastry brush to spread the oil mixture over all sides of the squash slices. Grease grill grates again and add squash directly to the heated (450°F) grill grates. Grill for 4–5 minutes per side or until tender and lightly charred. Remove and chop into bite-sized pieces.
  5. In a medium bowl, combine the thinly sliced kale, dried sweetened cranberries, honey roasted almonds, and shaved Parmesan. Toss with some of the prepared honey-Dijon sauce (from the next step) until the kale is well coated.
  6. In a small blender, combine all the sauce ingredients: 3 tablespoons apple cider vinegar, 3 tablespoons Dijon-style mustard, 3 tablespoons honey, and 3 tablespoons mayo. Season with salt and pepper to taste (I add about 1/8 teaspoon salt and a small pinch of pepper). Pulse until all ingredients are well combined and smooth. Transfer the sauce to a glass jar and refrigerate until ready to use.
  7. To assemble the bowls, divide even amounts of cooked brown rice into 4 individual serving bowls. Top each with equal amounts of the sliced grilled chicken and chopped grilled butternut squash. Add the kale salad in equal portions to each bowl and generously drizzle everything with additional honey-Dijon sauce. Serve immediately and enjoy!

Once boiling, add the brown rice, 1 tablespoon of butter, and 1 teaspoon of fine sea salt.
