  • 1 (10-ounce) can diced tomatoes with green chilies (such as Ro*Tel, do not drain; see Note 3)
  • 1 pound boneless, skinless chicken thighs (or breasts, see Note 2)
  • 1/2 cup quinoa (white or tri-colored, thoroughly rinsed)
  • 1 (15.25-ounce) can black beans (drained and rinsed)
  • 1 (10-ounce) can mild red enchilada sauce (see Note 4)
  • 1-1/2 cups frozen corn (or 1 can, drained)
  • 1 (32-ounce) carton chicken stock (or broth, 4 cups total; see Note 5)
  • 3 to 4 tablespoons finely chopped cilantro (optional finishing touch)
  • 1 lime (optional finishing touch, for juice)
  • Toppings (as desired, see Note 6 and above section for ideas)

Instructions

  1. Lightly spray a 6-quart slow cooker insert with cooking spray. Trim any excess fat from the chicken thighs and cut each piece into roughly 2-inch chunks for even cooking. Place the quinoa in a fine-mesh sieve and rinse thoroughly under cold running water until the water runs clear; set aside.
  2. Sauté the Aromatics: If your slow cooker has a sauté function, use it; otherwise, conduct this step in a separate large pot or Dutch oven. Add the olive oil and heat over medium-high. Add the finely diced yellow onion and sauté, stirring occasionally, until it begins to soften and turn a translucent golden color, approximately 5–7 minutes. Stir in the minced garlic and finely minced jalapeño (if using) and sauté for another 30 seconds until fragrant. Add the tomato paste along with all the seasonings: chili powder, ground cumin, and paprika. Season generously with salt and pepper to your preference (I typically add 1 teaspoon of salt and 1/2 teaspoon of black pepper at this stage). Continue to sauté for 1–2 minutes, or until the spices are very fragrant. Pour in the entire can of diced tomatoes with green chilies (do not drain the liquid) and mix well, scraping up any browned bits from the bottom of the pot. Carefully transfer this aromatic mixture into the base of your slow cooker.
  3. Combine & Cook: Add the prepared chicken chunks, rinsed quinoa, drained and rinsed black beans, mild red enchilada sauce, frozen corn, and chicken stock into the slow cooker with the sautéed mixture. Stir all the ingredients thoroughly to combine, ensuring the chicken pieces are submerged beneath the liquid as much as possible. Cover the slow cooker and cook on the HIGH setting for 2-1/2 to 3-1/2 hours, or until the chicken is cooked through and can be easily shredded with two forks (see Note 7 regarding cooking time).
  4. Shred & Finish: Once the chicken is tender, carefully remove it from the slow cooker and transfer it to a separate bowl. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir it into the soup. Add the finely chopped cilantro and 2 tablespoons of fresh lime juice, if you are using them. Taste the soup and adjust seasonings as needed, adding more salt, pepper, or lime juice to perfectly suit your palate. Serve the soup immediately into bowls, adding your desired array of delicious toppings, and enjoy!

Recipe Notes

Note 1: Be mindful of chili powder. It is not to be confused with “chilli powder,” which often refers to a much hotter blend. For this recipe, I use a milder “chili powder” blend (like McCormick’s), which focuses more on flavor than intense heat.

Note 2: While boneless, skinless chicken breasts can be used, I highly recommend opting for chicken thighs. Thigh meat becomes exceptionally tender and juicy in the slow cooker, making it effortless to shred. It’s also more forgiving if cooked slightly longer, whereas chicken breasts tend to dry out if overcooked.

Note 3: If you’re cautious about adding heat to your soup, substitute the diced tomatoes with green chilies with regular diced tomatoes or fire-roasted diced tomatoes for a milder flavor profile.

Note 4: The heat level of enchilada sauce can vary significantly between brands. I particularly enjoy and recommend Old El Paso® mild red enchilada sauce for its balanced flavor (this is not a sponsored recommendation). If you’re using a different brand, it’s a good idea to taste a small amount first to ensure it’s not overly spicy for your preference. If it’s too spicy, reduce the amount and add more chicken stock.

Note 5: The quality of your chicken stock plays a significant role in the overall flavor of your soup. A high-quality, flavorful stock allows you to minimize additional spices or flavor enhancers. I highly recommend Swanson® chicken stock for its rich taste in this recipe.

Note 6: Optional toppings are truly where this soup shines! Consider freshly shredded sharp Cheddar cheese, perfectly ripe diced avocado, an extra squeeze of fresh lime juice, crispy fried or baked tortilla strips (or even plain tortilla chips), a dollop of sour cream or Greek yogurt, and additional fresh cilantro. While the soup is fantastic straight from the slow cooker, these toppings genuinely complete the experience!

Note 7: It’s crucial that this recipe cooks on high heat. The quinoa requires higher heat to “pop” and cook through properly, achieving its tender texture. Slow cooker cooking times can vary slightly, so monitor your soup. Look for chicken that shreds easily, quinoa that is fully cooked and tender, and soft vegetables. Keep in mind that the longer this soup cooks, the more liquid the quinoa will absorb. For a thicker, heartier soup, this is ideal. However, if you prefer a more broth-like consistency, stop cooking as soon as the quinoa has “popped” and the chicken is tender.

Storage: This soup will naturally continue to thicken as the quinoa expands and absorbs more liquid over time. While it remains very flavorful, it will become denser. For optimal taste and texture, consume this soup within 2–3 days when stored in an airtight container in the refrigerator.
