  • 1-1/4 teaspoon paprika
  • 1-1/4 teaspoon onion powder
  • 1-1/4 teaspoon garlic powder
  • 1-3/4 teaspoon chili powder
  • Salt and pepper (to taste)
  • 1 large sweet potato peeled and chopped, about 3 cups
  • 12 ounces green beans trimmed and halved, about 3 cups
  • 1 (14.5-ounce) can chickpeas rinsed and drained
  • 4 tablespoons olive oil divided
  • Serving suggestions: baby spinach, 1 large ripe avocado, 1 (8-oz.) packet quinoa, fresh basil.

Hot Honey Mustard Sauce

  • 2 tablespoons Dijon-style mustard
  • 2 tablespoons honey
  • 1/4 cup olive oil or vegetable oil
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon water
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Prepare a very large baking sheet (a 15×21-inch pan works best for even roasting) or use two smaller sheet pans to avoid overcrowding. In a small bowl, combine the paprika, garlic powder, onion powder, chili powder, salt (I suggest 3/4 tsp), and pepper (I suggest 1/4 tsp) for your seasoning mix. Stir well and set aside.
  2. Peel the sweet potatoes and cut them into 1-inch chunks (I usually cut discs then quarter each disc). Trim the green beans and halve them. Rinse and thoroughly drain the chickpeas, then pat them very dry (a salad spinner is excellent for this).
  3. Place the chopped sweet potatoes on the large baking sheet. Drizzle with two tablespoons of olive oil and sprinkle with half of the prepared seasoning mix (eyeball it). Toss everything together to ensure the potatoes are evenly coated. Spread the potatoes out in a single layer without overlapping – this is crucial for them to roast, not steam. Bake for 15 minutes in the preheated oven.
  4. Carefully remove the sheet pan from the oven. Flip and stir the sweet potatoes, then push them to one side of the pan. On the other side, add the chickpeas and green beans. Drizzle with the remaining two tablespoons of olive oil and sprinkle with the remaining seasoning mix. Toss these together well. Again, ensure all vegetables and chickpeas are spread out in a single layer with ample space. Return the pan to the oven and bake for another 15–20 minutes, or until the vegetables are tender-crisp and slightly caramelized. Remove from the oven, toss everything once more, and taste, adding more salt if needed.
  5. While the vegetables are roasting, prepare your hot honey mustard sauce. Combine all sauce ingredients (Dijon mustard, honey, olive oil, red pepper flakes, water, apple cider vinegar) in a small blender. Season with salt and pepper to taste (I typically use 1/2 tsp salt and 1/8 tsp pepper). Blend until completely smooth and creamy. Make sure there’s no honey pooling at the bottom; if so, stir and re-blend. Transfer the sauce to a mason jar or a small bowl and refrigerate while you finish preparing the rest of the bowls.
  6. To assemble the bowls: thinly slice (or “ribbon”) the baby spinach and divide it among four serving bowls. Prepare the quinoa according to package directions (if not using pre-cooked) and divide it evenly among the bowls. Drizzle a small amount of the prepared hot honey mustard dressing into each bowl and toss the spinach and quinoa gently to coat. Divide the roasted sweet potatoes, green beans, and chickpeas equally among the bowls. Thinly slice or chop the ripe avocado and add an equal portion to each bowl. Finally, ribbon fresh basil leaves and sprinkle on top to taste. Drizzle generously with the hot honey mustard sauce (use as much or as little as you like; you’ll likely have some extra!). Note 1: Serving Suggestions: For building your perfect bowl, I highly recommend using fresh baby spinach, a large ripe avocado for creamy texture and healthy fats, a packet of microwaveable quinoa for speed (like Ancient Harvest Organic Sea Salt Quinoa), and fresh basil for an aromatic finish. Microwaveable quinoa is already cooked and only needs heating, making it a super-fast base. Alternatively, any leftover cooked quinoa works perfectly. Avocado and fresh basil are optional but add incredible flavor and freshness.

Note 2: The Importance of Pan Size for Roasting: Using a sufficiently large sheet pan is paramount for successful roasting. When vegetables are too crowded on a pan, they release moisture and steam instead of caramelizing and turning crispy. This significantly degrades the final taste and texture. My go-to is this 15×21-inch sheet pan, which I cannot recommend enough for optimal roasting. If you’re using smaller pans, make sure to divide the vegetables between two to ensure they have enough space. Be aware that smaller pans or overcrowded vegetables may require longer roasting times.
