I cook chicken often—it’s budget-friendly, universally liked, and very adaptable. Still, chicken dishes can get repetitive, so I experiment with marinades, sauces, and serving ideas to keep meals interesting. This lemon garlic marinade is one of my favorites: effortless to make and full of bright, fresh flavor.

How To Make This Lemon Garlic Chicken Marinade

  1. Prep chicken: Slice each breast in half horizontally if needed and pound to an even thickness. Pat dry and place in a resealable bag.
  2. Make marinade: Whisk together honey, oregano, garlic, fresh lemon juice, olive oil, salt, and pepper. Pour over chicken and seal the bag, massaging to coat.
  3. Marinate: Refrigerate for 20–30 minutes; do not exceed 1 hour to avoid the lemon beginning to change the chicken’s texture.

  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Slice each chicken breast in half horizontally to make thinner cutlets if needed. Cover with plastic wrap and pound to an even thickness. Pat dry and place chicken in a large resealable bag.
