Craving a breakfast that tastes like a decadent dessert but is secretly good for you? Look no further than these incredible Gluten-Free Banana Pancakes! Forget light and airy pancakes; these unique creations offer a delightful chewiness, brimming with the goodness of oats and gooey, melted chocolate. They evoke the comforting flavors and texture of your favorite Oatmeal Chocolate Chip Cookies, perfectly reimagined in pancake form. Each bite is a symphony of sweet banana, rich dark chocolate, and wholesome oats, providing a truly satisfying start to your day.

Unlike traditional pancakes that often rely on refined flours and excessive sugar, our recipe focuses on nourishing, naturally gluten-free ingredients. The texture of these pancakes is intentionally distinct – they are wonderfully thin, dense, and chewy rather than being overly fluffy. This characteristic makes them incredibly substantial and fulfilling. Thanks to the natural sweetness of ripe bananas, you’ll find these pancakes require minimal (if any) syrup, allowing their inherent flavors to shine. They’re crafted with healthful components that will keep you feeling energized and satiated, making them an excellent choice for a wholesome breakfast or even a guilt-free anytime snack.

Essential Ingredients for Your Gluten-Free Banana Pancakes

Crafting these delectable pancakes starts with selecting the right ingredients. Each component plays a vital role in achieving their unique flavor and satisfying texture. Here’s a detailed look at what you’ll need and why:

Wet Ingredients:

  1. Vanilla Flavored Greek Yogurt (1/3 cup, full-fat): This is a secret weapon for adding incredible creaminess, a hint of tang, and a significant protein boost. Full-fat yogurt contributes to a richer texture and helps you feel more satiated. We highly recommend a honey vanilla Greek yogurt, like the Greek Gods brand, for an extra layer of delightful sweetness and aroma.
  2. Unsweetened Vanilla Almond Milk (1/3 cup): Provides the necessary moisture to bring the batter together while lending a subtle vanilla note. Feel free to use any milk you have on hand, though almond milk keeps the flavor light and complements the other ingredients beautifully.
  3. Large Egg (1): Acts as a crucial binder, helping to hold the pancakes together and adding a touch of richness. It contributes to the structure and overall consistency of the batter.
  4. Vanilla Extract (1 teaspoon): A staple flavor enhancer that beautifully complements the banana, oats, and chocolate, creating a warm and inviting aroma. Don’t skip this!
  5. Overly Ripe Banana (1/2 cup, slightly heaping): This is non-negotiable for the best flavor and texture. Overripe bananas are naturally much sweeter and easier to mash, imparting a robust banana flavor and essential moisture to the pancakes. If your bananas aren’t quite ripe enough, check out recipes for banana cupcakes for tips on how to speed up the ripening process.
  6. Melted Coconut Oil (2 tablespoons): Adds a wonderful richness, healthy fats, and helps achieve a tender crumb. It also plays a role in preventing the pancakes from sticking to the griddle. Ensure it’s melted and then cooled to room temperature before mixing to prevent it from solidifying when it hits colder ingredients.

Dry Ingredients:

  1. Old-Fashioned Oats (1/2 cup) and Oat Flour (1/2 cup): These are the stars of our gluten-free base. The old-fashioned oats provide a lovely chewy texture, while the oat flour acts as the primary “flour,” giving the pancakes their structure. Together, they create a hearty, satisfying pancake. Remember to use certified gluten-free oats if dietary restrictions require it.
  2. Light Brown Sugar (1/4 cup, lightly packed): Adds a mellow sweetness and subtle caramel notes that beautifully enhance the banana and chocolate flavors. Its moist texture also contributes to the pancakes’ chewiness.
  3. Baking Powder (1 teaspoon) and Baking Soda (1/4 teaspoon): These are your leavening agents, working in tandem to give these pancakes a slight lift and tenderness. Even though these pancakes aren’t designed to be super fluffy, these agents are essential for the right texture.
  4. Ground Cinnamon (1/4 teaspoon) and Salt (1/4 teaspoon): Cinnamon adds a warm, comforting spice that pairs perfectly with banana and chocolate. A touch of salt is vital for balancing the sweetness and enhancing all the other flavors in the batter.
  5. Dark Chocolate Chips (1/3 cup): The ultimate indulgence! Dark chocolate chips melt into delightful pockets of rich, bittersweet chocolate throughout each pancake, making every bite feel like a treat.

Combining and gently mixing dry and wet ingredients in a bowl for gluten-free banana pancakes.

Step-by-Step Guide: How to Make Gluten-Free Banana Pancakes

Follow these easy steps to create your batch of delicious and wholesome gluten-free banana pancakes:

  1. Prepare Your Banana: In a small bowl, use a fork to thoroughly mash your overripe banana. The riper the banana, the sweeter and more easily it will incorporate into the batter. Aim for a smooth, lump-free consistency.
  2. Combine Wet Ingredients: In a large mixing bowl, whisk together the vanilla Greek yogurt, almond milk, large egg, vanilla extract, mashed banana, and cooled melted coconut oil. Ensure you whisk until all ingredients are completely combined and smooth, with no streaks.
  3. Mix Dry Ingredients: In a separate medium bowl, combine all the dry ingredients: old-fashioned oats, oat flour, light brown sugar, baking powder, baking soda, ground cinnamon, salt, and dark chocolate chips. Stir them well to ensure an even distribution.
  4. Unite Wet and Dry: Pour the dry ingredient mixture over the wet ingredients in the large bowl. Mix gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few small lumps are perfectly fine and often result in a more tender pancake. The batter will be thick and hearty due to the oats.
  5. Cook Your Pancakes: Preheat an electric griddle or a large, nonstick skillet to medium heat. Generously grease the cooking surface with cooking spray (a coconut oil-based spray works wonderfully) or a pat of butter. Once heated, pour about 2 to 3 tablespoons of pancake batter per pancake onto the griddle. These pancakes cook best when kept on the smaller side. Cook for approximately 2-3 minutes per side, or until they are golden brown and the center appears to puff up slightly. Use a sharp, large spatula for easy and successful flipping.
  6. Serve Immediately: Transfer the cooked pancakes to a plate. Drizzle them with your favorite toppings, such as maple syrup, a dollop of peanut butter, fresh banana slices, or any other pancake complements you enjoy. Serve them warm and savor every bite!
  7. Keep Warm (Optional): If you’re cooking a large batch and want to keep earlier pancakes warm, place them in a single layer (avoid stacking to prevent sogginess) on a large cooling rack set inside a baking sheet. Place the rack in an oven preheated to 200°F (95°C) for up to 20 minutes. Beyond that, they may start to dry out.

Quick Tip: Making Oat Flour

To effortlessly make your own oat flour, simply place old-fashioned or quick oats in a high-speed blender or food processor. Pulse them until they achieve a fine, powder-like consistency, resembling traditional flour. It’s crucial that all oats are finely ground, with no large chunks, to ensure the right texture for your pancakes. Always measure your oat flour *after* it has been blended, not before, for accurate proportions.

Expert Tips for Pancake Perfection

Achieving the best results with these Gluten-Free Banana Pancakes is easy when you keep a few key tips in mind:

  • Generously Grease and Flip with Care: Always ensure your skillet or griddle is generously greased with cooking spray or butter before adding batter. This prevents sticking and promotes a beautiful golden crust. For effortless flipping, a large, thin, and sharp spatula is your best friend. After every few pancakes, wipe down the pan with a paper towel and re-grease to maintain optimal cooking conditions.
  • Choose the Right Cooking Surface: Whether you opt for a large electric griddle or a spacious nonstick skillet, having adequate surface area is essential for cooking multiple pancakes efficiently. If using a skillet, a nonstick surface is highly recommended to prevent any frustration during flipping.
  • Stick to the Recipe – No Substitutions: After extensive testing to perfect this Gluten-Free Banana Pancakes recipe, we strongly advise against making any substitutions. The ratios of wet to dry ingredients, along with the specific leavening agents, are carefully balanced to achieve the unique chewy texture and wholesome profile. For truly stellar results, measure all ingredients precisely and follow the recipe as written.
  • Embrace Overripe Bananas: The riper your bananas are, the sweeter and more flavorful your pancakes will be. Look for bananas with plenty of brown spots; they are ideal for mashing and contribute significantly to the natural sweetness, reducing the need for added syrup.
  • Cool the Coconut Oil: If you melt your coconut oil in the microwave, make sure to let it cool completely to room temperature before adding it to the wet ingredients. Adding warm coconut oil to cooler liquids can cause it to seize up and become chunky, affecting the batter’s smoothness.
  • Mindful Mixing: While oats require good hydration, avoid overmixing the batter once the wet and dry ingredients are combined. Mix just until no dry streaks remain. Overmixing can develop gluten (even in oats, if they’re not certified GF) and lead to tougher pancakes.

Gluten-Free Assurance: Check Your Labels!

While the ingredients in these Gluten-Free Banana Pancakes are inherently gluten-free, it’s crucial to exercise caution if you have celiac disease or a severe gluten intolerance. Always double-check all ingredient labels – especially for oats – to ensure they are certified gluten-free and haven’t been processed in a facility that also handles gluten-containing grains. This small step guarantees your pancakes remain truly safe and enjoyable.

Serving Suggestions for Your Gluten-Free Banana Pancakes

These pancakes are fantastic on their own, but a few thoughtful toppings can elevate them to an even higher level of deliciousness. Here are some ideas to inspire your next breakfast:

  • Classic Maple Syrup: A timeless choice that complements the sweetness of the banana and the warmth of cinnamon.
  • Nut Butters: A generous dollop of peanut butter, almond butter, or cashew butter adds extra protein and a creamy texture.
  • Fresh Fruit: Sliced bananas (of course!), fresh berries, or a sprinkle of chopped nuts provide freshness and crunch.
  • Whipped Cream: A swirl of dairy or coconut whipped cream can turn these into an even more decadent treat.
  • Additional Chocolate: A few extra dark chocolate chips or a drizzle of chocolate sauce will satisfy any serious chocolate cravings.
  • Greek Yogurt: A spoonful of plain Greek yogurt can add a tangy contrast and an extra boost of protein.

Storing and Freezing Your Gluten-Free Banana Pancakes

These delicious pancakes are perfect for meal prepping! Here’s how to store them to enjoy later:

  • Refrigeration: Place any leftover cooked pancakes in an airtight container and store them in the refrigerator for up to 3 days. To reheat, simply warm them in a skillet over medium-low heat until heated through, or microwave them for 30-60 seconds until warm and soft.
  • Freezing for Longer Storage: For a quick breakfast option on busy mornings, these pancakes freeze beautifully. Arrange cooled pancakes in a single layer on a baking sheet to flash freeze for about 30 minutes. Once solid, transfer them to a freezer-safe bag, placing a piece of parchment paper between each pancake to prevent sticking. They can be stored in the freezer for up to 3 months. Reheat from frozen in a toaster oven, microwave, or a lightly greased skillet until warm and tender.

Frequently Asked Questions about Gluten-Free Banana Pancakes

Can I make these pancakes dairy-free?

Absolutely! The Greek yogurt can be replaced with a dairy-free vanilla or plain yogurt (like coconut or almond-based yogurt), and the almond milk is already dairy-free. Just ensure your chosen dairy-free yogurt has a similar consistency to Greek yogurt for best results.

Can I use a different oil instead of coconut oil?

Yes, you can. Avocado oil or a neutral-flavored vegetable oil would work as a substitute. However, coconut oil imparts a unique subtle flavor and contributes to the overall texture, so the taste might differ slightly.

My pancakes aren’t super fluffy, is that normal?

Yes, it’s completely normal for these pancakes! They are designed to be thin, chewy, and dense, similar to an oatmeal cookie, rather than light and fluffy. The oat flour and high moisture content from the banana and yogurt contribute to this unique texture. If you desire a slightly more airy pancake, ensure your baking powder and baking soda are fresh and active.

Can I prepare the batter ahead of time?

It’s generally not recommended to prepare the batter too far in advance. The oats will absorb a lot of the liquid over time, causing the batter to become very thick and potentially gummy. For the best texture, mix the batter right before cooking.

How can I make my bananas ripen faster for this recipe?

If your bananas aren’t quite overripe, you can try baking them. Place unpeeled bananas on a baking sheet and bake at 300°F (150°C) for 15-30 minutes, or until the peels are completely black and shiny. Let them cool before mashing.

Equipment

  • Electric griddle or large, nonstick skillet

Ingredients

Wet ingredients
  • 1/3 cup vanilla Greek yogurt full-fat, I love Greek Gods honey vanilla yogurt
  • 1/3 cup unsweetened vanilla almond milk or whatever milk you have on hand
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (slightly heaping) overripe banana
  • 2 tablespoons melted coconut oil
Dry ingredients
  • 1/2 cup old-fashioned oats
  • 1/2 cup oat flour blended up oats—see note 1
  • 1/4 cup light brown sugar lightly packed
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips
  • Toppings as desired see note 2

Instructions

  • Mash the banana with a fork in a small bowl—the riper the banana, the sweeter these pancakes! In a large bowl, whisk together the wet ingredients: Greek yogurt, milk, egg, vanilla extract, mashed banana, and coconut oil (see note 3). Whisk until completely combined and smooth.
  • In a separate, medium bowl, add in all the dry ingredients—oats, oat flour (see note 1), brown sugar, baking powder, baking soda, cinnamon, salt, and dark chocolate chips.
  • Pour dry ingredients on top of wet and mix until combined.
  • Preheat a griddle or large, nonstick skillet to medium heat. Generously grease with cooking spray (I use a coconut oil based spray) or butter. Pour out about 2–3 tablespoons pancake batter (the less batter, the better these work out) on the griddle or skillet. Allow to cook about 2–3 minutes per side or until golden brown and the center poofs up slightly. I recommend a sharp, large spatula to flip the pancakes.
  • Add cooked pancakes to a plate, drizzle with maple syrup or peanut butter (or whatever toppings you like on your pancakes) and enjoy immediately.
  • To keep the pancakes warm while cooking the rest, place them separately on a large cooling rack (stacking makes them soggy) in a 200°F oven, uncovered, for up to 20 minutes (after that they start to dry out).

Recipe Notes

Gluten Free: Make sure your oats are certified gluten free if you are gluten intolerant. Additionally, ensure all products you are using have been processed in a gluten-free facility, if this is a concern.

Note 1: To make oat flour, place regular old-fashioned oats or quick oats in a blender or food processor and pulse until they resemble flour. (Make sure they aren’t chunky and are the consistency of flour). Measure after blending and not before.

Note 2: Top with maple syrup, peanut butter, etc.—whatever you like on your pancakes!

Note 3: Measure the coconut oil in its liquid state. If you need to melt the coconut oil in the microwave, let it cool to room temperature before adding it to the wet ingredients or it will seize up and become chunky.

Recipe inspired by Rachael Ray’s original pancake recipe and adapted and made healthier/flourless.

Storage: Store leftover pancakes in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave until warm. For longer storage, freeze pancakes with parchment paper between layers in a freezer bag for up to 3 months. Reheat from frozen in a toaster or microwave.
