For Instant Pot cooking, press the ‘Sauté’ button and wait until the screen displays “HOT.” Add 1 tablespoon of olive oil to the pot and carefully place the seasoned side of the roast face down. Sprinkle the remaining salt and pepper over the unseasoned side of the roast.
  2. Allow the bottom of the roast to brown undisturbed for approximately 7 minutes to achieve a proper, deep sear. Then, flip the roast and sear the other side for another 7 minutes. Finally, sear all sides for about 2–3 minutes per side until well browned. The chuck roast might appear quite dark, even slightly burnt, but this deep browning is crucial for flavor development. Remove the roast from the Instant Pot and set it aside on a cutting board, covering it loosely with foil.
  3. While the beef is searing, prepare your aromatics: chop the yellow onion and mince the garlic. With the Instant Pot still on the ‘Sauté’ function, add the 2 tablespoons of unsalted butter to the pot. Once the butter has mostly melted, add the chopped onion and minced garlic. Sauté for 3–4 minutes, stirring occasionally, until the onions are softened and lightly golden.
