- 2 cups sliced cremini mushrooms
- 1 small yellow onion, finely diced
- 1-1/2 teaspoons minced garlic
- 4 tablespoons unsalted butter
- 1/4 cup flour
- 2 teaspoons chicken bouillon powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon ground cayenne pepper (optional)
- 2 cups whole milk (see recipe notes)
- 1-1/4 cups chicken stock
- 1 (16-ounce) package gnocchi
- 2 cups chopped rotisserie chicken
- 2 cups coarsely chopped baby spinach
- 1/2 cup grated Parmesan cheese

Instructions
- Move an oven rack to the upper third of your oven, then preheat to 425°F (218°C).
