  • 3 tablespoons coconut oil, divided
  • 1 pound boneless, skinless chicken breast, sliced in half (2 small breasts)
  • Salt and pepper, to taste
  • 2 teaspoons yellow curry powder, divided
  • 1 cup diced yellow onion (about 1 medium onion)
  • 1 cup diced carrot (optional, about 2 carrots)
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 3 tablespoons red curry paste (see Note 1)
  • 2 teaspoons ground coriander
  • 1-1/4 cup uncooked basmati rice
  • 1 (13-ounce) can full-fat coconut milk (see Note 2)
  • 2 cups chicken broth, plus more as needed
  • 1 cup frozen peas (see Note 3)
  • 1 lime (optional, for fresh lime juice)
  • Fresh cilantro (optional, finely chopped for garnish)

Instructions

  1. Slice chicken breasts in half widthwise to create four thinner pieces. Gently pound them to an even thickness using a meat mallet or the bottom of a heavy frying pan. Season both sides with 1/4 teaspoon pepper, 1/2 teaspoon salt, and 1 teaspoon curry powder.
  2. In a large (12-inch) nonstick pan or pot with a lid, heat 2 tablespoons of coconut oil over high heat. Once the oil is hot and shimmering, add the seasoned chicken in a single layer. Cook for 2–3 minutes per side, until the chicken is cooked through and lightly golden. Transfer the cooked chicken to a cutting board, cover it loosely with aluminum foil, and let it rest for 10 minutes before dicing into bite-sized pieces.
  3. In the same pan, add the remaining 1 tablespoon of coconut oil. Add the diced onion, carrots (if using), minced garlic, and minced ginger. Sauté for about 5 minutes, or until the vegetables have softened and become fragrant and slightly golden. Stir in the uncooked basmati rice, red curry paste, ground coriander, the remaining 1 teaspoon of curry powder, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Continue to stir constantly for 2 minutes, allowing the rice and spices to toast and become very fragrant.
  4. In a liquid measuring cup, combine the full-fat coconut milk. Add enough chicken broth to reach a total of 2 cups of liquid. Whisk this mixture until it’s completely smooth. Pour this coconut milk and broth mixture into the pan with the rice and vegetables, along with an additional 2 cups of plain chicken broth.
  5. Increase the heat to medium-high. Bring the entire mixture to a gentle boil, observing when the surface becomes foamy. Once boiling, immediately cover the pan tightly with a lid and reduce the heat to very low. Allow the curry to simmer undisturbed for 13–16 minutes, or until most of the liquid has been absorbed by the rice.
  6. After the simmering time, remove the pan from the heat but keep it covered. Let the dish stand, still covered, for 10 minutes without disturbing. This crucial resting period allows the rice to fully steam and prevents it from becoming sticky or mushy.
  7. Finally, gently fluff the cooked rice with a fork. Mix in the thawed frozen peas and the diced cooked chicken. If desired, squeeze in some fresh lime juice for brightness and sprinkle with finely chopped fresh cilantro. Serve hot and savor this delightful one-pot meal!
