The Baked Falafel I Fell In Love With In Israel!

My journey with falafel began during an unforgettable trip to Israel, a country where falafel is not just food, but a way of life. I was instantly captivated by the crispy exterior and tender, herb-infused interior of every falafel I tasted. Driven by this newfound passion, I immersed myself in local cooking classes, eager to uncover the secrets behind this iconic street food. While the traditional fried version holds a special place in my heart, I became inspired to develop a baked alternative that captures all the authentic flavors and textures I cherished, but with a lighter touch.

Baking falafel quickly became my preferred method. It eliminates the need for deep frying, making the cooking process significantly easier and much less messy. There’s no splattering oil or lingering grease smell, which is a huge bonus for any home cook looking for a convenient yet delicious meal. This vegetarian recipe is a testament to that goal, using a thoughtful blend of olive oil, a splash of briny pepperoncini juice, and a selection of dried herbs to infuse each falafel with extraordinary flavor.

This recipe is more than just a dish; it’s a delightful fusion of the vibrant culinary traditions I discovered in Israel and a commitment to lighter, more accessible home cooking. It’s perfect for those seeking a healthier meal without compromising on taste. I genuinely believe you’ll fall in love with this baked version just as much as I have!

Key Ingredients for Perfect Baked Falafel

Crafting delicious baked falafel starts with understanding the role of each ingredient. Here’s a detailed look at what makes this recipe truly stand out:

  • Dried Chickpeas

For the best flavor and texture, using **dried chickpeas** that have been soaked overnight is absolutely essential. Unlike canned chickpeas, which are pre-cooked and too moist, dried chickpeas provide the ideal firm yet tender consistency needed to form robust falafel patties that hold their shape and crisp up beautifully when baked. To further enhance their tenderness, consider adding about 1/2 teaspoon of baking soda to the soaking water. This helps to break down the chickpea skins, resulting in a creamier interior.

  • Fresh Herb Blend

The vibrant heart of any falafel recipe lies in its fresh herbs. This recipe calls for a generous cup each of **flat-leaf parsley, cilantro, and green onions**. This trio not only imparts a beautiful green hue but also delivers a complex, fresh, and aromatic flavor profile. Parsley adds a bright, slightly peppery note, cilantro brings a distinctive citrusy and earthy quality, and green onions provide a mild, savory depth. Feel free to adjust these quantities to your preference, or even experiment with other fresh herbs like dill for an extra layer of Mediterranean authenticity.

  • Garlic

Garlic is a cornerstone of Middle Eastern cuisine, and falafel is no exception. Its pungent, aromatic flavor is crucial for creating a truly authentic taste. Don’t be shy with the garlic – use it generously! However, always feel free to adjust the amount according to your personal preference for intensity.

  • Essential Seasonings

A carefully selected blend of spices elevates the falafel from good to outstanding. **Cumin** provides a warm, earthy foundation, while **coriander** adds a delightful citrusy and slightly sweet undertone. **Paprika** contributes a mild, smoky sweetness and a beautiful reddish hue. Of course, a good measure of **salt and pepper** is necessary to balance and enhance all the flavors. For those who enjoy a little kick, adding 1/4 to 1/2 teaspoon of **cayenne pepper** will introduce a pleasant heat without overpowering the other delicate spices.

  • Baking Powder

To achieve that perfect light and airy texture characteristic of great falafel, **baking powder** plays a vital role. It acts as a leavening agent, creating small air pockets within the patties as they bake. This ensures your falafel isn’t dense or heavy, but rather wonderfully fluffy and tender on the inside, providing a delightful contrast to the crispy exterior.

  • Flour, Oil, and Broth

These ingredients are crucial for both consistency and flavor. A small amount of **flour** (such as whole wheat or chickpea flour) acts as a binder, helping the falafel mixture hold its shape without becoming crumbly. **Olive oil** not only adds richness and moisture to the mixture but also contributes to the falafel’s savory depth and helps them crisp up beautifully in the oven. For moisture, **vegetable broth** is typically used, but you can easily substitute it with chicken broth for a different flavor profile or simply water if you prefer to keep it minimal. The liquid content ensures the falafel remains tender and moist inside.

How to Master Baked Falafel: Step-by-Step Instructions

Follow these straightforward steps to create perfectly baked falafel every time, from soaking to serving:

  1. Soak Chickpeas

Begin by placing your dried chickpeas in a large bowl, ensuring there’s ample room for them to expand significantly. Cover them with plenty of cold water, making sure they are submerged by at least 2-3 inches. Allow them to soak overnight, typically for 8–12 hours, or until they are visibly plump and tender. If you need to soak them for longer, up to 2 days, simply cover the bowl and store it in the refrigerator to prevent fermentation.

  2. Blend the Flavorful Mixture

Once your chickpeas are thoroughly soaked, drain them extremely well. Excess moisture is the enemy of crispy falafel! Transfer the drained chickpeas to a large food processor. Add in the coarsely chopped parsley, cilantro, and thinly sliced green onions. Follow with the chopped garlic cloves, ground cumin, paprika, pepper, ground coriander, baking powder, salt, flour, olive oil, and vegetable broth (or water). Pulse the mixture on high speed for 3–5 minutes, periodically stopping to scrape down the sides of the bowl. Continue blending until the chickpeas are completely broken down, the herbs are finely incorporated, and the mixture forms a coarse, slightly pasty consistency that holds together when pressed. Be careful not to over-blend into a smooth paste; a little texture is desirable.

  3. Prepare the Herbed Baking Tray

Set out a large baking sheet (a 15″ x 10″ pan works perfectly). In a small separate bowl, whisk together the 1/4 cup olive oil, 1/4 cup pepperoncini liquid, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, and 1/4 teaspoon pepper. Once well combined, pour this aromatic mixture onto the baking sheet. Gently tip the tray to ensure the herbed oil evenly coats the entire bottom surface of the pan. This infused oil will not only prevent sticking but also add a wonderful crust and extra flavor to your falafel.

  4. Form and Arrange the Patties

Using a 1/8-cup measuring cup (or a small ice cream scoop) for consistent sizing, scoop the falafel dough. Shape each portion into flat discs, approximately 1/2-inch thick and 2 inches wide. If you find the mixture is too soft or difficult to handle, cover it and refrigerate for 20–30 minutes to firm it up. Carefully place the formed patties onto the prepared oiled tray, leaving a little space between each. You should be able to make about 20–22 falafel patties from this recipe.

  5. Bake to Golden Perfection

Preheat your oven to 375°F (190°C). Once hot, bake the falafel patties for 25–30 minutes. After the first 15 minutes of baking, remove the pan from the oven and, using a sturdy metal spatula, carefully flip each patty to its other side. This ensures even cooking and promotes a golden-brown, crispy exterior on both sides. Return the pan to the oven and continue baking until the falafels are beautifully browned and cooked through.

  6. Serve and Enjoy

For the best experience, serve your baked falafel fresh out of the oven, while they are still warm and crisp. Pair them with your favorite sauces and accompaniments for a complete and satisfying meal. Leftover falafel can be stored in the refrigerator for future enjoyment.

  • As a Hearty Wrap

Transform your falafel into a portable and fulfilling meal by stuffing them into a wrap. Take a soft pita bread or a large tortilla and layer it with crisp lettuce, diced tomatoes, your favorite fresh veggies (like bell peppers or shredded carrots), and a sprinkle of feta cheese. Add a generous serving of baked falafel and finish with a dollop of creamy hummus or a refreshing swirl of tzatziki sauce. These wraps are perfect for a quick lunch or a dinner on the go.
