Key Ingredients for the Best Tuna Patties

While the basic concept of tuna patties is simple, a few carefully selected ingredients elevate this recipe from good to extraordinary. Let’s delve into what makes these patties truly special:

  • Canned Tuna Packed in Olive Oil: This is arguably the most crucial ingredient. Opting for high-quality albacore tuna packed in olive oil, like Genova’s®, makes a significant difference. Tuna in olive oil is richer, more flavorful, and maintains a desirable chunky texture, preventing the patties from becoming mushy. Ensure you drain it thoroughly to avoid excess moisture.
  • Panko Breadcrumbs: Forget regular breadcrumbs! Panko breadcrumbs are light, airy, and create an unparalleled crispiness in the final product. They absorb less oil and contribute to that coveted golden-brown crunch without making the patties heavy.
  • Freshly Grated Parmesan Cheese: Skip the pre-grated variety in a can. Freshly grated Parmesan offers a superior, nuanced flavor and texture that melts beautifully into the patties, binding them while adding a salty, umami depth. Look for Parmesan with a sandy-like consistency from the dairy section. Brands like Kraft or Bella Rosa work well.
  • Aromatic Fresh Herbs: The combination of fresh dill, vibrant green onions, and flat-leaf parsley is a game-changer. These herbs infuse the patties with a bright, herbaceous freshness that cuts through the richness of the tuna. Be sure to choose flat-leaf parsley over curly for its more robust flavor profile.
  • Eggs and Mayonnaise: These act as the essential binders, ensuring your tuna patties hold together beautifully. Eggs add richness and structure, while mayonnaise contributes moisture and a subtle tang, preventing the patties from drying out.
  • Lemon Zest & Juice: A touch of fresh lemon zest and juice brightens all the flavors, adding a necessary zing that makes the patties truly pop.

Do You Put Egg in Tuna Patties? The Role of Binders

Yes, absolutely! Eggs are a critical component in most tuna patty recipes, and for very good reason. They serve multiple vital functions:

  • Binding Agent: Most importantly, eggs act as a powerful binder, holding all the ingredients together. Without them (or another suitable binder), your patties would likely fall apart in the pan, turning into a scramble rather than a cohesive patty.
  • Moisture & Texture: Eggs contribute to the internal moisture of the patties, preventing them from becoming dry or crumbly. They also help create that desirable soft and tender texture inside.
  • Flavor Enhancement: While subtle, eggs add a richness that complements the other ingredients, contributing to the overall deliciousness of the tuna patties.

In addition to eggs, mayonnaise also plays a crucial role as a binder and moistening agent in this specific recipe, further enhancing the texture and flavor.

How To Make The Best Tuna Patties: Step-by-Step Guide

Creating these perfect tuna patties is incredibly straightforward. Follow these simple steps for a truly delicious result:

  1. Prepare Your Ingredients: Begin by finely grating the yellow onion (aim for about 1 cup) and chopping your fresh herbs – parsley, green onions, and dill (2 tablespoons of each). Zest one lemon and extract 2 tablespoons of juice. Thoroughly drain your canned tuna, ensuring no excess liquid remains. Line a large sheet pan with parchment paper for easy handling and chilling.
  2. Combine Dry Ingredients (Except Tuna): In a large mixing bowl, combine the grated onion, panko breadcrumbs, paprika, garlic powder, chopped herbs, eggs, grated Parmesan cheese, lemon zest, 2 tablespoons of lemon juice, and mayonnaise. Season with salt and pepper to taste (I typically use about 1/4 teaspoon of each). Mix these ingredients thoroughly until well combined.
  3. Gently Fold in Tuna: Now, add the thoroughly drained tuna to the mixture. Gently fold it in using a spatula or your hands. The goal here is to keep the tuna in discernible flakes, not to break it down into a paste. This preserves the texture and gives the patties a superior mouthfeel. If the mixture feels too dry, add a touch more mayo; if too wet, incorporate a bit more panko.
  4. Form and Chill the Patties: Using a 1/4 cup measure, scoop out portions of the mixture and firmly pack them. Shape each portion into a patty, approximately just under an inch thick. Place the formed patties onto your prepared parchment-lined sheet pan. Once all patties are formed (you should get about 12), place the sheet pan in the freezer for 15-20 minutes. This chilling step is crucial for helping them hold their shape during cooking.
  5. Cook the Patties: You have two excellent options for cooking:
    • Pan-Frying (Recommended for Maximum Crispiness): Heat 2 tablespoons of olive oil in a large skillet or pan over medium-high heat. Carefully transfer the chilled patties to the hot pan using a sharp metal spatula. Cook for 3-4 minutes per side, or until beautifully golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary, adding more oil as needed. Place cooked patties on a paper-towel-lined plate to absorb any excess oil.
    • Baking (A Lighter Option): Preheat your oven to 425°F (220°C). Drizzle 2 tablespoons of vegetable oil (not olive oil, as it has a lower smoke point) onto a baking sheet and preheat the pan in the oven for about 1 minute. Carefully place the chilled patties in a single layer on the hot pan. Bake for 12-15 minutes, then flip the patties and bake for an additional 4-6 minutes, or until golden and heated through.
  6. Serve Promptly: Divide your optional coleslaw onto plates, top with the freshly cooked tuna patties, and generously drizzle with homemade tartar sauce. Garnish with lemon wedges if desired and enjoy immediately!

What Do You Eat With Tuna Patties? Creative Serving Suggestions

While these tuna patties are fantastic on their own, pairing them with the right accompaniments elevates the entire meal. Here are our top recommendations:

  • The Classic Pairing: Simple Coleslaw and Tartar Sauce: This is, hands-down, our favorite way to enjoy them! For a quick and effortless side, grab a bag of tri-colored coleslaw mix and your favorite refrigerated coleslaw dressing (we’re big fans of Litehouse for its creamy tang). Toss them together until the mix is coated to your desired creaminess. If you prefer to make coleslaw from scratch, try this homemade coleslaw recipe. The crisp, cool slaw offers a wonderful textural and flavor contrast to the warm, savory patties.
  • Tuna Burger: Transform your patty into a gourmet burger! Serve it on a soft brioche bun, add your favorite toppings like lettuce, tomato, and pickles, and swap traditional mayonnaise for a generous dollop of that delicious homemade tartar sauce.
  • On a Fresh Green Salad: For a lighter, healthier meal, place warm tuna patties atop a bed of mixed greens. Drizzle with a light vinaigrette or, of course, a dollop of tartar sauce for extra flavor.
  • As an Appetizer or Side Dish: Smaller patties can be served as delightful appetizers with dipping sauce, or as a side dish to complement a larger meal.
  • With Roasted Vegetables: Pair them with seasonal roasted vegetables like asparagus, broccoli, or sweet potatoes for a well-rounded and nutritious dinner.

Quick Tip: The Etymology of Coleslaw

Have you ever wondered about the origin of the word “coleslaw”? It comes from the Dutch word “koolsla,” which means “cabbage salad.” The Latin word for cabbage is “cole,” so “koolsla” literally translates to “cabbage salad.” Makes perfect sense, doesn’t it?

Let’s Chat Tartar Sauce: The Perfect Accompaniment

A great homemade tartar sauce is the ultimate partner for these crispy tuna patties. Its creamy texture, tangy flavor, and fresh herbs perfectly balance the savory notes of the patties. Best of all, many of the ingredients overlap with the patty mixture, making it even easier to prepare. Here are a few tips for the best tartar sauce:

  • Fresh Dill is Key: If you’re using fresh dill in your patties, definitely include it in your tartar sauce. Its distinct, bright flavor is essential. If you don’t have fresh dill, a small touch of dried dill or other dried herbs can be a good substitute, but fresh is highly recommended.
  • Quality Mayonnaise Matters: The base of your tartar sauce is mayonnaise, so choose a good quality brand you love. We highly recommend Hellman’s/Best Foods® for its rich, creamy texture and balanced flavor. The better the mayo, the better your sauce will taste.
  • Lemon Zest & Juice: Fresh lemon juice provides a crucial acidity, while the zest adds an aromatic brightness. For ease, use a microplane for zesting and a citrus juicer for extracting maximum juice. These tools make prep a breeze!
  • Sweet Pickle Relish and Worcestershire Sauce: These two ingredients add depth and a wonderful savory-sweet tang that defines classic tartar sauce. Don’t skip them!
  • Make Ahead: Tartar sauce often tastes even better after it’s had a little time for the flavors to meld. Feel free to prepare it an hour or two (or even a day) in advance and store it in the refrigerator.

How Do You Keep Tuna Patties From Falling Apart? Troubleshooting Tips

One of the most common frustrations with patties or burgers is when they crumble during cooking. Fortunately, keeping your tuna patties intact is easy with a few key techniques:

  • Utilize Strong Binders: As discussed, eggs and mayonnaise are essential binders in this recipe. They create a cohesive mixture that holds its shape. Ensure you include the specified amounts.
  • Chill the Mixture Thoroughly: This step is non-negotiable! Freezing the formed patties for 15-20 minutes solidifies the ingredients and fats, making them much more rigid and less prone to breaking when they hit the hot pan. Don’t skip this crucial chilling period.
  • Handle Delicately But Firmly: When forming the patties, ensure you pack the mixture firmly enough so they are compact. When transferring and flipping, use a sharp metal turner or spatula and be gentle. Only flip the patties once to avoid unnecessary disturbance.
  • Ensure Tuna is Well-Drained: Excess moisture is the enemy of a firm patty. If your tuna is too wet, the mixture will be too loose and more likely to fall apart. Squeeze out as much liquid as possible before adding it to the bowl.
  • Don’t Overcrowd the Pan: Cooking too many patties at once can lower the pan’s temperature, leading to steaming instead of browning, and makes flipping difficult. Cook in batches if needed.

Variations and Customizations

While this recipe is perfect as is, feel free to get creative and customize your tuna patties:

  • Spice It Up: Add a pinch of cayenne pepper, a dash of hot sauce to the mixture, or some finely chopped jalapeños for a spicy kick.
  • Cheese Please: Experiment with other cheeses like sharp cheddar, smoked gouda, or Monterey Jack for different flavor profiles.
  • Vegetable Boost: Incorporate finely diced bell peppers, celery, or grated carrots for added crunch and nutrition.
  • Herb Alternatives: If dill isn’t your favorite, try fresh chives, cilantro, or a touch of dried oregano.
  • Gluten-Free Option: Use gluten-free panko breadcrumbs to make this recipe suitable for those with gluten sensitivities.

Storage and Reheating Tips

These tuna patties are so delicious, you might not have any leftovers! But if you do, here’s how to store and reheat them:

  • Refrigeration: Store cooked tuna patties in an airtight container in the refrigerator for up to 3 days.
  • Freezing: Cooked or uncooked patties can be frozen.
    • Uncooked: Form the patties, place them on a parchment-lined sheet pan, and freeze until solid. Then, transfer them to a freezer-safe bag or container, separated by parchment paper, and freeze for up to 2 months. Thaw in the refrigerator before cooking, or cook directly from frozen, adding a few extra minutes to the cooking time.
    • Cooked: Allow cooked patties to cool completely, then wrap them tightly in plastic wrap, place them in a freezer bag or container, and freeze for up to 2 months.
  • Reheating: For best results, reheat cooked patties in a skillet over medium heat until warmed through and crispy again. You can also reheat them in an oven or air fryer at 350°F (175°C) for 10-15 minutes, or until hot and crisp. Microwaving is not recommended as it can make them soggy.

Prep Time: 25 minutes
Cook Time: 6 minutes
Chilling Time: 15 minutes
Total Time: 46 minutes
Yields: 12 patties

Equipment

  • Large sheet pan (15″ x 21″)
  • Parchment paper
  • Large pan or skillet

Ingredients

For the Tuna Patties:

  • 1 large yellow onion (about 1 cup grated)
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 6 tablespoons finely chopped fresh herbs (a mix of parsley, green onions, and dill is recommended)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese (freshly grated, see Note 1)
  • 1 lemon (for zest and juice)
  • 2 tablespoons mayonnaise
  • 3 (5-ounce) cans tuna in olive oil (thoroughly drained, see Note 2)
  • Salt and pepper, to taste
  • Olive oil, for cooking (or vegetable oil for baking, see Note 5)
  • Optional: Tri-colored coleslaw mix and Litehouse coleslaw dressing (see Note 3)

For the Tartar Sauce:

  • 1 lemon (for zest and juice)
  • 1/2 cup mayonnaise
  • 1-1/2 tablespoons sweet pickle relish
  • 1 tablespoon finely chopped fresh dill
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Dijon-style mustard
  • Salt and pepper, to taste

Instructions

  1. Prepare Ingredients: Peel and grate the large yellow onion to yield approximately 1 cup (200g). Finely dice the parsley, green onions, and dill, measuring 2 tablespoons of each. Zest one lemon for 1 teaspoon of zest and juice it for 2 tablespoons of juice. Thoroughly drain the tuna and set it aside. Line a large sheet pan with parchment paper.
  2. Mix Patty Base: In a large bowl, combine all patty ingredients *except* the drained tuna (grated onion, panko, paprika, garlic powder, chopped herbs, eggs, Parmesan, lemon zest, 2 tbsp lemon juice, and mayo). Season with 1/4 teaspoon each of salt and pepper. Mix until well combined.
  3. Add Tuna & Form Patties: Gently fold in the thoroughly drained tuna, making sure to keep it in flakes for superior texture. (See Note 4 for troubleshooting if the mixture consistency is off.) Using a 1/4 cup measure, scoop and firmly pack the mixture, forming patties just under an inch thick. Place them on the prepared sheet pan. Repeat to make about 12 patties.
  4. Chill Patties: Freeze the formed patties for 15–20 minutes. This crucial step helps them firm up and hold their shape during cooking.
  5. Make Tartar Sauce: While the patties chill, zest the second lemon for 1/2 teaspoon zest and juice it for 2 tablespoons juice. In a small bowl, combine the lemon juice and zest with the mayonnaise, sweet pickle relish, fresh dill, Worcestershire sauce, and Dijon mustard. Season with 1/8 teaspoon each of salt and pepper, or to taste. Mix well, taste, and adjust seasonings. Refrigerate until ready to use; the flavors meld wonderfully over time.
  6. Prepare Optional Coleslaw: If serving with coleslaw, combine the bagged coleslaw mix with your prepared coleslaw dressing. Toss with tongs until desired creaminess is achieved. Refrigerate until ready to serve and toss again just before plating.
  7. Cook Tuna Patties: Heat 2 tablespoons of olive oil in a large pan or skillet over medium-high heat. Using a sharp metal spatula, carefully transfer the chilled patties to the hot pan. Cook for 3–4 minutes per side until golden brown and crispy. (For baking instructions, see Note 5.) Place cooked patties on a paper-towel-lined plate to absorb excess oil. Repeat with remaining patties, adding more oil as needed.
  8. Serve & Enjoy: Divide the optional coleslaw onto plates, top with the hot tuna patties, and generously dollop with homemade tartar sauce. Serve immediately, with lemon wedges if desired.

Recipe Notes

  • Note 1: Parmesan Cheese: For the best flavor and texture, use freshly grated Parmesan cheese with a sandy consistency, not canned or pre-shredded varieties, which can be too salty or overpowering.
  • Note 2: Tuna Choice: Opt for high-quality albacore tuna packed in olive oil (e.g., Genova®). It offers richer flavor and a better chunky texture compared to water-packed tuna, which can make patties too moist if not meticulously drained.
  • Note 3: Quick Coleslaw: For a simple side, use a bag of tri-colored coleslaw mix and your favorite refrigerated coleslaw dressing (Litehouse is a great choice!).
  • Note 4: Troubleshooting Patty Consistency: If your mixture feels too dry or crumbly, add a tiny bit more mayonnaise (1/2 to 1 tablespoon at a time) and mix well. If it’s too wet or loose, gradually add a tablespoon or two more of panko breadcrumbs. The mixture should be moist enough to hold together when pressed, but not sticky or overly saturated.
  • Note 5: Baking Instructions: To bake, preheat your oven to 425°F (220°C). Drizzle 2 tablespoons of vegetable oil (not olive oil, which can smoke at high temperatures) onto a baking sheet and heat the pan in the oven for 1 minute. Carefully place the chilled patties in a single layer. Bake for 12–15 minutes, flip, and bake for another 4–6 minutes until golden and cooked through. Serve immediately.
  • Storage: Refrigerate leftover tuna patties in an airtight container for up to 3 days. For freezing, wrap individual patties tightly and place in a freezer bag for up to 2 months. Reheat in a skillet or oven for best crispy results.
