In the realm of desserts, finding a treat that satisfies your cravings without compromising on nutrition can be a challenge. That’s where our Cashew Cake shines. This recipe isn’t just about deliciousness; it’s about thoughtful ingredients and a healthier approach to baking that doesn’t skimp on flavor or texture. What Makes This Cashew Cake So Special?

Unlike many traditional cake recipes laden with excessive amounts of refined sugar and flour, this Cashew Cake takes a different path. It features a significantly lower sugar content, often using just a fraction of what you’d find in typical baked goods. The magic largely lies in its ingenious use of old-fashioned oats as a flour substitute, making it naturally gluten-free (though always check labels for celiac safety). Furthermore, this versatile cake can be easily adapted to be dairy-free by simply omitting the frosting and opting for plant-based butter or coconut oil in the cake batter itself.

While we embrace mindful eating, we also believe in balance. This cake, even with its optional frosting, remains a nutritionally sound choice when enjoyed in moderation. It’s not about striving for perfection, but about making delicious decisions that support a healthier lifestyle. And before we dive into its health attributes, let’s be clear: this cake is first and foremost incredibly, undeniably tasty.

Essential Ingredients for Your Perfect Cashew Cake

Each ingredient in this Cashew Cake recipe plays a vital role in achieving its signature taste and texture. Let’s delve deeper into some of the key components:

  • Cashews: For the most vibrant flavor with minimal effort, we highly recommend using **dry roasted and lightly salted cashews**. The roasting process intensifies their natural nuttiness, while a hint of salt beautifully balances the sweetness in the cake. This small detail makes a significant difference. (Here’s a good example of what we use).
  • Old-fashioned oats: While it might seem intuitive that any type of oats would work since they’re blended, using *old-fashioned* oats is paramount for precise measurements and the right cake consistency. Quick oats and steel-cut oats are denser and more compact, which would throw off the liquid-to-dry ratio, potentially resulting in a dry or crumbly cake. Old-fashioned oats provide the ideal structure once blended into a fine “oat flour.”
  • Almond Milk: We’ve tested this recipe extensively with various milks, including cow’s milk and other plant-based options, and they all yield fantastic results. The recipe specifies unsweetened vanilla almond milk to align with the goal of creating a nutritious and versatile dessert. Feel free to use your preferred milk, adapting to your dietary needs or taste preferences.
  • Cornstarch: This is an absolutely critical ingredient in our flourless cashew cake. Since we’re not using traditional wheat flour, cornstarch steps in to provide essential structural support and thickness to the batter, ensuring a beautifully set and tender cake. It acts as a binder, contributing to the cake’s desirable density and helping it hold its shape.
  • Light Brown Sugar: Beyond just sweetness, brown sugar brings a wonderful depth of flavor with its subtle caramel notes and contributes to the cake’s moist texture. Its presence is carefully measured to keep the total sugar content lower than many conventional cakes.
  • Unsalted Butter: Using cold, cubed unsalted butter helps create a more tender crumb. The temperature of the butter is important for how it incorporates into the batter during blending. For a dairy-free option, you can substitute with plant-based butter or coconut oil.
  • Eggs: Large eggs act as a crucial binder and leavening agent, contributing to the cake’s structure and moisture. They help hold the ingredients together and provide richness.
  • Baking Powder & Baking Soda: These leavening agents work in harmony to give the cake a subtle lift, preventing it from becoming too heavy while maintaining its signature dense texture.
  • Vanilla Extract & Ground Cinnamon: These aromatic additions enhance the overall flavor profile, adding warmth and complexity that beautifully complements the nutty cashews and oats.

Quick Tip: Gluten-Free Assurance

While the core ingredients in this cashew cake are **naturally gluten-free**, it is absolutely essential to diligently check all your ingredient labels if you or someone you’re baking for has celiac disease or a severe gluten sensitivity. Cross-contamination can occur during processing, and even minute traces of gluten can cause significant issues. Always look for certified gluten-free oats and other ingredients to ensure a truly safe and enjoyable treat.

Effortless Baking: How To Make Your Cashew Cake

One of the best aspects of this Cashew Cake recipe is its straightforward simplicity. The process is quick, but it does hinge on one crucial piece of equipment: a **good, powerful blender**. High-speed blenders like a Blendtec® or Vitamix® are ideal for breaking down the cashews, butter, and oats into an incredibly smooth, uniform batter that forms the foundation of this exquisite cake.

During the blending process, make sure to **stop the blender periodically and thoroughly scrape down the sides of the jar**. This ensures that all ingredients are fully incorporated, preventing any dry pockets or unblended pieces, and guarantees a consistently smooth and perfect batter.

Baking to Perfection & Frosting Fundamentals

Baking this cake is just as simple as preparing the batter. Once the batter is smooth and ready, it’s poured into a prepared baking pan and sent to the oven. The aroma that fills your kitchen while it bakes is utterly delightful.

Expert Tips for a Flawless Cashew Cake

Achieving the perfect Cashew Cake is simple with these helpful tips:

  • Choose the Right Pan: Opt for a **light-colored 8×8-inch baking pan**. Lighter pans help prevent over-browning on the edges. Always line your pan with parchment paper, leaving an overhang on the sides. This creates a convenient sling, making cake removal incredibly easy and mess-free.
  • Knowing When It’s Done: This cashew cake naturally tends to slightly cave in the middle after baking, which is completely normal due to its unique composition. You’ll know it’s perfectly baked when the top is no longer glossy, the edges appear firm and are lightly browned, and a toothpick inserted into the very center of the cake comes out clean or with only a few moist crumbs attached.
  • Room Temperature Cream Cheese is Key: For the smoothest, most luxurious cream cheese frosting, it’s vital to start with **room temperature cream cheese**. Take it out of the fridge at least an hour before you plan to make the frosting. Softened cream cheese blends effortlessly, preventing lumps and creating that silky-smooth texture we all love.
  • Patience with Frosting: Resist the temptation to frost the cake immediately after it comes out of the oven. It is absolutely crucial to **allow the cake to cool completely** before applying any frosting. If the cake is still warm, the frosting will melt, become runny, and lose its beautiful texture and appearance. A fully cooled cake ensures your frosting remains perfect.
  • Optional Topping: For an extra touch of elegance and crunch, consider coarsely chopping a few additional cashews and sprinkling them over the frosted cake. This adds both visual appeal and a delightful textural contrast.

Maximizing Freshness: Cashew Cake Storage Guide

Proper storage ensures your delicious Cashew Cake stays fresh and enjoyable for as long as possible:

  • **Frosted Cake**: Since the cream cheese frosting contains dairy, any frosted portions of the cake must be **tightly wrapped and stored in the refrigerator**. While delightful, the fridge can accelerate staleness, so for the best taste and texture, aim to consume frosted cake within 2-3 days of baking.
  • **Unfrosted Cake**: If you prefer to frost individual servings as needed, **unfrosted bars can be stored in an airtight container at room temperature**. They will maintain their quality for a similar timeframe.
  • **Freezing Unfrosted Cake**: Unfrosted cashew cake bars freeze exceptionally well, offering a convenient make-ahead option. Frosted bars, however, are not recommended for freezing due to the dairy in the cream cheese frosting, which can separate and alter texture upon thawing.

To Freeze and Thaw Unfrosted Cashew Cake Bars:

  1. **Cool Completely**: Ensure the cake is *completely* cooled to room temperature before slicing or wrapping. This prevents condensation and ice crystal formation. Slice the cake into individual bars or desired portions.
  2. **Individual Wrapping**: Wrap each unfrosted cake bar tightly in plastic wrap. This layer of protection helps prevent freezer burn and preserves moisture.
  3. **Freezer Bag**: Place all the individually wrapped cake pieces into a large, heavy-duty freezer bag or an airtight freezer-safe container. Remove as much air as possible before sealing. Label with the date.
  4. **Thawing**: To enjoy a frozen bar, simply set it out at room temperature for an hour or two, or gently warm it in the microwave for a quicker thaw.

*Note: While freezing unfrosted cake is effective, there might be a slight, subtle loss of texture and flavor compared to freshly baked. Nevertheless, it remains a fantastic option for longer-term storage.

Creative Ways to Use Leftover Cashews

If you find yourself with extra cashews after baking this delightful cake, don’t let them go to waste! Cashews are incredibly versatile and can elevate many dishes. Here are some fantastic recipes where they truly shine:

  • Golden Milk: Enhance this warming, healing beverage with the creamy richness of cashews, blending beautifully with turmeric and other spices.
  • Cashew Ice Cream: Craft a surprisingly creamy and decadent ice cream without the need for bananas or traditional dairy.
  • As a topping for Microwave Oatmeal: A sprinkle of chopped cashews adds a lovely crunch and healthy fats to your morning bowl of oats.
  • Carrot Smoothie: Transform a simple breakfast smoothie into a luxurious, dessert-like experience reminiscent of carrot cake.
  • Mango Chicken Curry: Add a rich, nutty texture and flavor to a savory, exotic curry dish with sweet mangoes.

Equipment

  • High-powered Blender
  • 8 x 8-inch baking pan lined with parchment paper
  • Hand mixer

Ingredients

Cake
  • 1 cup dry roasted and lightly salted cashews plus more for topping, see note 1
  • 1 cup light brown sugar lightly packed, see note 2
  • 8 tablespoons unsalted butter cold, cubed
  • 2 large eggs
  • 1/4 cup unsweetened vanilla almond milk or milk of choice
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned oats
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons cornstarch see note 3
Cream Cheese Frosting
  • 2 ounces reduced-fat cream cheese room temperature
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1-3/4 cups powdered sugar
  • 1 tablespoon unsweetened vanilla almond milk or milk of choice

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the exposed pan areas and parchment with cooking spray. Set aside.
  2. Add all cake ingredients to a powerful blender in the following order: cashews, brown sugar, cold cubed unsalted butter, eggs, almond milk, vanilla extract, old-fashioned oats, baking powder, baking soda, salt, ground cinnamon, and cornstarch. Blend until the batter is completely smooth and uniform, typically 1–2 minutes. During blending, stop and scrape down the sides of the blender jar as needed to ensure all ingredients are fully incorporated.
  3. Carefully pour the smooth cake batter into the prepared baking pan, using a spatula to ensure every last bit is transferred. Smooth the top of the batter with the spatula. Bake for 35–40 minutes, or until the edges are lightly browned and firm, and the center is set. A toothpick inserted into the middle of the cake should come out clean.
  4. While the cake is baking and cooling, prepare the cream cheese frosting. Place the softened, room-temperature cream cheese in a large mixing bowl. Using a hand mixer, beat the cream cheese with the vanilla extract and salt until completely smooth. Gradually add the powdered sugar, beating well between each addition, until the frosting is smooth, creamy, and reaches your desired consistency. Add the tablespoon of milk and beat until fully incorporated and smooth.
  5. Once the cake has completely cooled (this is very important to prevent the frosting from melting), spread the cream cheese frosting evenly over the top. If desired, garnish with additional coarsely chopped cashews for extra texture and presentation. Slice into 16 bars and serve.

Recipe Notes

Note 1: For optimal flavor, use dry-roasted and lightly salted cashews. This adds a fantastic depth of flavor without any extra effort. An extra handful can be coarsely chopped and sprinkled on top of the frosted cake for an optional garnish.

Note 2: Ensure your light brown sugar is soft and fresh. This is crucial for achieving the best possible texture and moisture in your cake. Stale or hardened brown sugar can impact the final result.

Note 3: Cornstarch is a key ingredient in this flourless recipe. It provides essential structural support and thickness to the batter, acting as a binder and helping the cake hold its dense, moist form.

Nutrition Note: The nutritional information provided here (167 calories per serving) does not include the optional cream cheese frosting. If you opt for the frosting, one serving of the cake with frosting contains approximately 227 calories. This offers a more indulgent, yet still balanced, treat.

Storage: Frosted cashew cake bars should be stored in an airtight container in the refrigerator and are best enjoyed within 2-3 days to maintain optimal freshness and prevent staleness. Unfrosted bars can be stored at room temperature in an airtight container or frozen. To freeze unfrosted bars, wrap each individually in plastic wrap, then place in a freezer-safe bag or container. Thaw at room temperature or gently warm in the microwave.
