Ingredients

Farro
  • 1 cup pearled farro plain, see note 1
  • 1 cup apple cider not apple cider vinegar
  • 2 cups chicken broth or water
  • 2 bay leaves
Salad
  • 2-1/4 cups sweet potatoes 1 to 2 large potatoes, peeled and chopped into 1/2-inch cubes
  • 1 tablespoon olive oil for roasting sweet potatoes
  • Salt and pepper to taste
  • 3 tightly packed cups baby spinach and arugula mix optional, see note 2
  • 1/3 cup roasted and salted pistachios coarsely chopped
  • 1/3 cup dried sweetened cranberries
  • 1 large fuji apple diced
  • Goat cheese or feta or shaved Parmesan cheese, optional
Dressing
  • 1 large lemon zest and juice
  • 2 tablespoons red wine vinegar
  • 1-1/2 teaspoons Dijon-style mustard
  • 2 teaspoons honey
  • 1/4 cup olive oil

Instructions

  • Preheat oven to 400°F (200°C).
  • In a medium pot, combine farro, apple cider, chicken broth, bay leaves, and 1 teaspoon salt. Bring the mixture to a boil, then reduce the heat to medium-low and let it simmer gently until the farro is tender and most of the liquid has been absorbed, which usually takes about 30 minutes. (If the liquid absorbs fully but the farro isn’t tender enough, add a small amount more liquid. If the farro is tender but there’s still excess liquid, simply drain it off.) Once cooked, remove and discard the bay leaves. Transfer the cooked farro to a bowl and place it in the fridge to cool while you prepare the remaining salad components.
  • Meanwhile, peel your sweet potato(s) and chop them into uniform 1/2-inch cubes. Spread them onto a large sheet pan, drizzle with 1 tablespoon of olive oil, and season with 1/8 teaspoon salt and a pinch of pepper. Toss everything to ensure the sweet potatoes are evenly coated, then arrange them in a single layer on the pan. Bake for 15 minutes, then flip or stir the cubes and continue baking for another 10–15 minutes, or until they are tender and slightly browned at the edges. Let cool completely.
  • While the sweet potatoes are roasting, prepare your dressing. Zest the lemon to yield 1/4 teaspoon of zest, then juice it to get 1-1/2 tablespoons of fresh lemon juice. Combine the lemon zest and juice with all the other dressing ingredients in a jar. Season to taste (I typically add 1/4 teaspoon salt and a pinch of pepper). Secure the lid and shake well to combine until all ingredients are thoroughly mixed and smooth. Place the dressing in the fridge until you are ready to assemble the salad.
  • Once the farro has completely cooled, add 2 tablespoons of the prepared dressing to it and mix thoroughly. This helps infuse the farro with flavor.
  • Coarsely chop the pistachios (or leave them whole if preferred) and dice the apple. In a large serving bowl, add the arugula and spinach mix. Top with the completely cooled farro, completely cooled roasted sweet potato cubes, pistachios, diced apple, and dried cranberries. It’s important to only add dressing to the portion of salad you plan to eat immediately to prevent wilting. Toss with dressing to taste. (You might not use all the dressing, but I often do!) If desired, finish your salad with an optional sprinkle of goat cheese, feta, or shaved Parmesan, according to your personal taste preference.

Note 1: If you already have cooked farro on hand, you will need approximately 3 cups of cooked and cooled farro for this recipe. Note 2: I typically use 3 tightly packed cups of this arugula and spinach mix if I intend to consume the entire salad in a single sitting. However, if you are preparing this salad for meal prep over several days, it is best to leave out the lettuce and store the nuts and cheese separately. This strategy helps maintain the freshness and texture of all components until you are ready to enjoy your meal.

Storage: This salad does not keep well once dressed, as the vinaigrette can quickly wilt the greens and make the other toppings soggy. If you do not plan to eat the entire salad in one go, it is highly recommended to dress, add nuts, and add cheese only to the portion you will be consuming at that specific time. Store the leftover undressed salad components separately in airtight containers in the refrigerator. When stored undressed, the salad remains wonderfully fresh for 3–4 days in the fridge, allowing for convenient and fresh meals throughout the week.
