Coconut Macaroons and Mexican Wedding Cookies
Ingredients
For Coconut Macaroons:

- 5-1/2 cups sweetened coconut flakes (See Note 1 for optimal texture)
- 1 can (14 oz.) sweetened condensed milk (full-fat, NOT evaporated milk)
- 1/4 teaspoon fine sea salt
- 1/2 tablespoon vanilla extract (or 1 teaspoon vanilla bean paste)
- 1-1/2 cups chocolate chips (milk, semi-sweet, or dark chocolate; + 1 teaspoon coconut or vegetable oil; optional for dipping, See Note 2)
For Mexican Wedding Cookies:
- 1/3 cup pecan halves
- 1 cup unsalted butter
- 3/4 cup powdered sugar
- 1/2 teaspoon fine sea salt
- 2 teaspoons vanilla extract
- 1-3/4 cups all-purpose flour
- 1 tablespoon cornstarch
- Powdered sugar (for coating the cookies)
Instructions
Coconut Macaroons
- PREP: Preheat oven to 350 degrees F (175°C). Line two large baking trays with parchment paper or a Silpat liner and set aside.
- MIX MACAROONS: In a very large bowl, combine the sweetened coconut flakes, flour, vanilla extract, and sea salt. Scoop every bit of the sweetened condensed milk into the bowl. Use hand mixers to beat ingredients until just combined; be careful not to overmix.
- FORM COOKIES: Use a large cookie scoop (about 1-1/2 tablespoons in size) to portion out golf ball-sized, compressed cookies. Press the mixture firmly into the scoop. The scoop may get sticky; wash it a few times during the process or spray it with nonstick spray. You can leave the cookies as they come out of the scoop for a rustic look, or quickly roll them with your hands for a smoother appearance.
- BAKE: Place cookies on the prepared sheet pans, ensuring they are about 1 inch apart. Bake for 11 to 14 minutes, or until the coconut is lightly toasted on top and the bottoms are a very light brown. Avoid overbaking. Remove from the oven and allow to cool on the pan for 5 minutes before gently transferring them with a metal spatula to a wire cooling rack to cool completely.
- OPTIONAL CHOCOLATE DIP: If you wish to dip your macaroons in chocolate, ensure the cookies are fully cooled. In a microwave-safe bowl, combine the chocolate chips and 1 teaspoon of coconut or vegetable oil. Microwave in bursts of 20 seconds, stirring for 20-25 seconds between each burst, until the chocolate is melted and smooth. Remember that chocolate continues to melt even after it’s removed from the microwave, so stir thoroughly to prevent burning. Transfer about 1/4 cup (eyeball this amount) of the melted chocolate to a small plastic bag. Seal the bag, pressing out any air, and set aside.
- DIP & DRIZZLE: Generously dip the bases of the cooled macaroons into the remaining melted chocolate. Transfer the dipped cookies back to your parchment paper-lined trays. Use scissors to cut a tiny tip off the corner of the plastic bag containing the reserved melted chocolate; drizzle this chocolate over the cookies for decoration. Allow the chocolate to set completely at room temperature.
- STORAGE: These cookies will stay fresh, tightly covered, at room temperature for up to 3 days. Alternatively, store them in an airtight container in the refrigerator for 5-7 days. We find they are best enjoyed within 1-2 days of baking. These macaroons freeze and defrost exceptionally well, especially without the chocolate coating.
Mexican Wedding Cookies
- TOAST PECANS: Preheat the oven to 350 degrees F (175°C). Spread the pecan halves in an even layer on a sheet pan. Bake for 5-7 minutes, or until they become fragrant. Watch them carefully to prevent burning. Remove from the oven and allow to cool completely before transferring them to a mini food processor or cutting board. Pulse or finely chop the pecans into very small pieces. Be careful not to over-process in the food processor, as this can result in pecan butter.
- MIX DOUGH: In the bowl of a stand mixer fitted with the whisk attachment (or using a large bowl and a hand mixer), combine the softened butter and 3/4 cup powdered sugar. Cream them together until the mixture is smooth and creamy, which usually takes about 3-4 minutes. Add in the vanilla extract, sea salt, cornstarch, and the pulsed/chopped pecans. - BAKE COOKIES: Once the dough is chilled, measure out cookie dough using a 1 tablespoon measuring spoon for each ball to ensure consistent size. If the dough becomes too warm and difficult to work with, place it back in the freezer for 10-15 minutes. Preheat the oven to 375 degrees F (190°C). Line a light-colored sheet pan with a Silpat liner. Bake for 7-11 minutes (our oven typically takes 10 minutes). Remove from the oven, let them stand on the tray for 3-5 minutes, then transfer to a wire cooling rack. Allow them to cool for an additional 2-3 minutes.
- POWDERED SUGAR COATING: Pour powdered sugar into a bowl (start with 1 cup; you may need a bit more). While the cookies are still warm (but not hot), gently roll each cookie in the powdered sugar until fully coated. Return the coated cookies to the wire cooling rack. Let them cool down for a few more minutes, then roll them in powdered sugar again for a thicker, snowier coating.
