Korean Beef Tacos bring big flavor in every bite with marinated beef, crunchy slaw, and a spicy Sriracha-lime drizzle all tucked into warm, charred tortillas

Taco Tuesday Got A Major Upgrade!
These tacos have been a long time coming. A few months ago, my husband and I stumbled into a tiny hole-in-the-wall Korean spot with near-reliable reviews. One bite of their beef tacos and he was already asking if I could recreate them at home.
It took a few tests to get the balance right. I wanted tender beef with real caramelization, not just salty stir-fry flavor. Once I landed on this marinade with apple, onion, soy sauce, and a touch of brown sugar, everything clicked. The beef was juicy and honestly good enough to eat straight from the pan.
Some nights I skip the tortillas and pile it over rice, but when I want the full experience, I add crunchy slaw, drizzle on the sauce, and char the tortillas. Every bite hits sweet, salty, tangy, and spicy all at once. These Korean Beef Tacos are now a permanent dinner rotation favorite at my house.

Ingredients In Korean Beef Tacos
| Ingredient | Swaps or Tips |
|---|---|
| Tortillas | Swap for corn tortillas, or make it a rice bowl instead of tacos. |
| Beef + Marinade | Use flat iron, hanger, or skirt steak. Flank steak may be labeled London Broil. |
| Slaw | Use plain shredded cabbage, or add thinly sliced radishes for more bite. |
| Asian Taco Sauce | Adjust spice by adding more or less Sriracha, or sub with Gochujang for deeper heat. |
| Garlic & Ginger | Fresh is best, but jarred or paste versions work in a pinch. |
| Green Onions | Slice thin for finish or toss into the slaw for extra crunch. |
Quick Tip
Flank steak may be labeled as London Broil, Flank Steak Fillet, or Jiffy Steak. If unsure, ask at the meat counter. Flat iron, hanger, or skirt steak also work.

Korean Beef Taco Notes
- Spiciness: Keep it mild by skipping Sriracha in the slaw and using less in the sauce. For more heat, add extra Sriracha or Gochujang.
- Cooking Tip: Heat the skillet well before adding beef for a juicy char.
- Don’t overcrowd: Cook in batches so the beef sears instead of steaming.
