  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • 1 (13-ounce) package Butterball Turkey Sausage (such as Polska Kielbasa)
  • 3 tablespoons unsalted butter
  • 3 medium bell peppers, diced
  • 1 small yellow onion, diced
  • 1 teaspoon minced garlic
  • 2 teaspoons dried parsley
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
