These Slow Cooker Quinoa Fajitas offer a vibrant and healthy twist on a classic! Simply combine all the delicious ingredients – fresh veggies, tender chicken, and protein-rich quinoa – in your slow cooker and let it work its magic. Once cooked, shred the chicken, layer the flavorful filling into warm tortillas, and top with your favorite additions like cheese, sour cream, cilantro, and a squeeze of fresh lime for an incredibly easy, tasty, and satisfying dinner.

Ingredients

  • Cooking spray
  • 1 cup uncooked quinoa
  • 3/4 pound (11 ounces) boneless, skinless chicken thighs or breasts, optional (see Note 2)
  • 1-1/2 cups frozen corn or 1 can corn
  • 1 (15.25-ounce) can black beans, drained and rinsed
  • 2 (14.5-ounce) cans fire-roasted crushed tomatoes, undrained
  • 1 cup chicken stock or broth or vegetable broth
  • 2 cups sweet potatoes, peeled and chopped into 1/2-inch pieces
  • 1-1/2 cups thinly sliced bell peppers (e.g., 1/2 orange and 1/2 red pepper)
  • 1 fajita seasoning mix packet (or homemade blend, see Note 3)
  • Tortillas (flour or corn)
  • Toppings as desired (see Note 4)

Instructions

  1. Thoroughly rinse the quinoa in a fine-mesh sieve. Drain and rinse black beans. Peel and dice the sweet potatoes into small, even 1/2-inch pieces (important for even cooking!). Thinly slice the bell pepper(s) and cut any long strips in half lengthwise.
  2. Generously spray the slow cooker with cooking spray or insert a slow cooker liner. Combine the rinsed quinoa, chicken (cut each breast into 4-5 even pieces and each thigh into 3-4 even pieces for even cooking, see Note 2), corn, black beans, crushed tomatoes, chicken stock, sweet potatoes, and bell peppers in the slow cooker. Add the fajita seasoning mix or your homemade blend (see Note 3). Gently stir all the ingredients together, ensuring the chicken pieces are submerged beneath the other ingredients.
  3. Cook on HIGH for 3-1/2 to 4 hours. It’s crucial to watch carefully during the last hour to prevent the quinoa from burning (avoid opening the slow cooker lid frequently, as this disrupts the heating process). We do not recommend cooking on the low setting for this recipe, as it can result in mushy quinoa. Cook until the chicken is easily shreddable and the quinoa has “popped” and is tender. Remove the cooked chicken and thinly slice or shred it using two forks. Gently stir all the ingredients again, then taste and adjust seasonings, adding salt and pepper as needed.
  4. Spoon the delicious fajita filling into lightly charred or warmed tortillas (see Note 5 for charring instructions). Top generously with your optional toppings. For an authentic experience, fresh lime, vibrant cilantro, cool sour cream, and sharp Cheddar cheese are highly recommended!

Recipe Notes

Note 1: This recipe was rigorously tested in a slow cooker and yielded the best results. I also tested it in a pressure cooker/Instant Pot, but found the quinoa became too mushy, and the chicken risked being undercooked. For consistent perfection, stick with your slow cooker!

Note 2: Chicken thighs tend to remain more tender and moist in the slow cooker, but chicken breasts can certainly be used. Regardless of your choice, ensure you cut the chicken into smaller, even pieces (breasts into 4-5 pieces, thighs into 3-4 pieces) before adding them to the slow cooker so they cook thoroughly and evenly alongside the quinoa and vegetables. For a vegetarian meal, simply omit the chicken and use vegetable stock/broth. To make this recipe completely vegan, follow the vegetarian suggestions and use non-dairy topping alternatives.

Note 3: If you prefer to make your own fajita seasoning blend instead of using a packet, here is the perfect mix, yielding the same quantity as a standard packet:

  • 2 teaspoons ground chili powder (use McCormick for a milder flavor)
  • 1 teaspoon each: paprika, fine sea salt, granulated sugar, ground cumin
  • 1/2 teaspoon each: onion powder, garlic powder
  • 1/8 teaspoon: ground cayenne pepper (adjust to your heat preference)

You can prepare this blend in bulk and store individual serving-sized portions (approximately 1 tablespoon per packet) in your pantry for future use.

  1. Lightly spray both sides of your tortillas with cooking spray (olive oil or canola-based sprays work well).
  2. Carefully char each side of the tortilla very lightly over an open flame on your stovetop until slightly blackened in spots. If you don’t have a gas stove, you can achieve a similar effect by warming them for 10-15 seconds per side in a dry skillet over medium-high heat.
  3. Immediately remove the tortilla from the heat and fold it in half. Place it under a clean kitchen towel to keep warm and pliable while you repeat the process with the remaining tortillas.
