Ingredients

For the Cilantro-Cashew Sauce

  • 1/3 cup cashews, roasted and salted
  • 1 cup fresh cilantro (leaves and stems)
  • 3 large limes
  • 1/3 cup water
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the Tostadas & Toppings

  • 1-1/2 cups avocado (from 2 very ripe, pitted and peeled avocados)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 6 extra-thin corn tortillas
  • Cooking spray
  • 1-1/2 cups pinto beans (or 1 can refried beans, see note 1)
  • 3/4 cup halved cherry tomatoes
  • 2 cups shredded romaine lettuce or iceberg lettuce
  • 1/4 cup queso fresco cheese

Instructions

  1. Preheat oven to 425°F (220°C). Zest the limes to obtain 1/2 teaspoon of zest. Juice the limes using a citrus juicer to yield 5 tablespoons of lime juice. Set both aside. Warm your pinto beans (refer to Note 1 for preparation tips).
  2. To prepare the cilantro-cashew sauce, place the cashews in a heatproof bowl. Pour 1 cup of boiling water over the cashews and let them stand for 45 minutes to an hour, then drain thoroughly. Transfer the drained cashews, fresh cilantro, 3 tablespoons of the reserved lime juice, lime zest, 1/3 cup water, olive oil, garlic powder, salt, and pepper into a small, powerful blender. Blend until the mixture is completely smooth and creamy. For best flavor, refrigerate the sauce, allowing the ingredients to meld and intensify. The sauce can be made ahead of time; simply give it a good stir before serving (see Note 2).
  3. Halve the avocados and use a spoon to scoop their flesh into a medium bowl. Mash the avocado with a fork. Add the remaining 2 tablespoons of lime juice, salt, pepper, and garlic powder. Mash again until all ingredients are well combined and smooth.
  4. Generously spray both sides of each corn tortilla with cooking spray. Lightly sprinkle salt on both sides. Arrange the tortillas on a large baking sheet, ensuring they are spaced out with plenty of room and do not overlap. Bake for 4 minutes, then use tongs to carefully flip each tortilla to the other side. Continue baking for another 3–6 minutes, or until the tortillas are crispy and lightly golden. Remove from the oven and let them stand for 5–10 minutes to cool and crisp up further.
  5. To assemble the tostadas, evenly divide the mashed avocado mixture among the 6 crispy tortillas. Spread approximately 1/4 cup of the warmed pinto beans over each tortilla. Top each tostada with equal amounts of shredded lettuce, cherry tomatoes, and queso fresco cheese. Drizzle the cilantro-cashew sauce over the assembled tostadas to your taste preference. Serve immediately and enjoy!

Note 1: This recipe is designed to utilize leftovers from our homemade Pinto Beans recipe!

  • If you don’t have time for homemade beans, canned refried beans are a convenient substitute. Gently warm them in a small pot on the stove or in the microwave before spreading them onto the tostadas.
  • For the best texture and flavor, I highly recommend making the homemade pinto beans and waiting until the next day to use them. Freshly made, they can be a bit thin; they thicken considerably overnight, becoming perfect for tostadas. Remember to warm them slightly before assembly.

Note 2: This sauce recipe likely yields more than you’ll need for one batch of tostadas, but this quantity ensures optimal blending and consistency. Feel free to halve the recipe, or make the full batch and use the extra sauce throughout the week. It’s fantastic on these black bean bowls! Store any leftover sauce in an airtight container in the refrigerator for up to 1 week.

Vegan Option: To make this recipe completely vegan, simply swap the queso fresco cheese for your favorite vegan cheese alternative, or omit cheese entirely. The cilantro-cashew sauce is naturally dairy-free.
