My journey with bulgur wheat began somewhat unexpectedly. While perfecting my Tabouli recipe, I found myself with several bags of bulgur and an insatiable desire to keep cooking with it. What started as a test quickly blossomed into a full-blown obsession, leading me to pick up a few more bags!

  • 1-3/4 cups fresh sweet corn kernels (cut from about 3-4 medium cobs)
  • 1 medium avocado diced
  • 1/2 cup diced red onion (mellowed in ice water if desired)
  • 1/2 cup goat cheese or feta (crumbled, optional)
For the Zesty Lemon-Basil Vinaigrette
  • 1/3 cup extra-virgin olive oil
  • 2 fresh lemons (zested and juiced, yields ~1 tsp zest, 1/3 cup juice)
  • 1 tablespoon honey
  • 2 teaspoons Dijon-style mustard
  • 1-1/2 teaspoons minced garlic (about 1-2 cloves)
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper

Step-by-Step Instructions

  • Prepare the Bulgur: In a medium-sized bowl, combine the fine bulgur wheat with 3/4 teaspoon of salt. Bring 1-1/4 cups of water to a rolling boil. Pour the boiling water immediately over the bulgur, stir gently to ensure all bulgur is moistened, then cover the bowl tightly with plastic wrap or a lid. Let it sit undisturbed at room temperature for 15–25 minutes, or until all the water has been completely absorbed by the bulgur. Once absorbed, fluff the bulgur with a fork to separate the grains and allow it to cool completely to room temperature. For quicker salad prep, you can refrigerate it at this stage. We highly recommend preparing the bulgur a day ahead to streamline your cooking process on serving day!
  • Make the Lemon-Basil Vinaigrette: First, zest the lemons using a microplane to yield about 1 teaspoon of zest. Then, juice the lemons with a citrus juicer to get approximately 1/3 cup of fresh lemon juice. In a small blender or food processor, combine 1/4 cup of packed fresh basil (from your 0.75 oz packet) along with the lemon zest, lemon juice, olive oil, honey, Dijon mustard, minced garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Blend until the mixture is completely smooth and emulsified. Transfer the vibrant vinaigrette to a sealed jar and refrigerate until you’re ready to use it. This allows the flavors to meld beautifully.
  • Assemble the Salad: To the cooled, fluffed bulgur, add the fresh blueberries, diced English or Persian cucumbers, coarsely chopped pistachios, sweet corn kernels, and diced avocado. Recipe Notes for Perfection

Note 1: Fine Bulgur Explained & Substitutions. It’s important to use fine bulgur for this recipe, as the soaking method specified relies on its quick absorption. Coarser bulgur varieties require simmering. If fine bulgur is hard to find locally (check international aisles or order online), excellent alternatives include cooked and cooled quinoa or small couscous, which will still yield a delicious salad.

Note 2: Choosing the Right Cucumbers. Avoid standard slicing cucumbers, as they tend to be too watery and less flavorful for this salad. For the best results, stick to crisp English cucumbers or Persian cucumbers (also known as mini or salad cucumbers). You’ll typically need one large English cucumber or about 4–5 small Persian cucumbers to get the desired 1.5 cups of diced cucumber.

Note 3: Pistachio Pointers. To save prep time, opt for shelled pistachios. We highly recommend using roasted and lightly salted pistachios, as their flavor is more pronounced and complements the salad beautifully. Here’s a great option that works perfectly in this dish.
