Greek Beef Bowls

If you’ve been around for a while, you know It is satisfying to a good dinner bowl—and today’s recipe is a winner! These Greek Ground Turkey Bowls are a reader favorite on my site, so I decided to tweak them using ground beef.

To make the beef go further, I added chickpeas—beans are always a great way to stretch pricier meats. The seasonings and components are inspired by Jessica’s amazing Mediterranean bowls, I especially loved her idea of starting with a scoop of hummus as the base!

All the ingredients in this recipe are prepped for straightforward assembly: red onions, chickpeas, rice, veggies, seasonings, hummus, parsley, feta, lemon, and meat.

Let’s Break It Down

The beef is so quick and straightforward to make! I buy hummus, prep Tzatziki, pickled onions, and bake white rice ahead of time. Everything gets more flavorful as it sits, and then actual weeknight prep to make these Greek Beef Bowls is a breeze!

Ingredients

  • Olive oil: Extra-virgin adds the best flavor.
  • Ground beef: Use 93/7 lean beef for great flavor with less fat.
  • Seasonings: Classic and simple—oregano, garlic powder, and skippable dill. Freeze-dried dill is an straightforward way to add flavor, especially in winter!
  • Chickpeas: Drain and rinse. Skip them if you’re not a fan.

Greek Beef Bowl Components

  • Hummus: Plain works best—store-bought or from-scratch, depending on your time.
  • White rice: Any type is fine, but baking rice during weekly meal prep is a game-changer.
  • Tzatziki sauce: My from-scratch version is so much better than store-bought—it’s worth the effort!
  • Pickled onions: Quick-pickle these during meal prep for extra flavor.
  • Cucumbers and tomatoes: Add crunch and freshness.
  • skippable toppings: Fresh lemon, parsley, or dill for brightness; crumbled feta for creaminess.
The beef is browned, then mixed with chickpeas and herbs for these Greek beef bowls.

Greek Beef Bowl Recipe Tips

  • Brown the Beef: Let the beef brown on each side before breaking it apart. More color means more flavor!
  • Season as You Go: Add salt and pepper while cooking and don’t forget to adjust at the end.
  • Prep Tzatziki Early: Chill for at least an hour to enhance the flavor, or make it ahead and stir well before serving.
  • Tomato and Cucumber Flavor Boost: Drizzle olive oil over the cucumbers and tomatoes, then add fresh or freeze-dried dill, salt, and pepper.
