  • Unforgettable Flavor: Thanks to a special “secret ingredient,” this soup boasts a depth of flavor that usually takes hours to achieve on the stovetop. It’s rich, savory, and perfectly seasoned.
  • Quick Cooking Time: The Instant Pot works its magic, cooking the chicken to tender perfection and melding all the flavors in mere minutes under pressure.
  • Healthy and Wholesome: Packed with lean protein, fiber-rich beans, and fresh vegetables, this soup is a nutritious choice that doesn’t compromise on taste.
  • Highly Customizable: From mild to spicy, and with a variety of toppings, you can easily tailor this soup to suit everyone’s preferences.

The Secret Ingredient: Red Enchilada Sauce

What makes this chicken tortilla soup truly exceptional is a “secret ingredient” that effortlessly adds layers of flavor and richness: red enchilada sauce. Forget using just plain vegetable or chicken broth; by combining quality chicken stock with a can of red enchilada sauce, we create a base that is vibrant, savory, and perfectly spiced.

Just one simple can of enchilada sauce transforms the entire soup. It infuses it with a balanced blend of chili peppers, spices, and a hint of tanginess, providing a thick, well-seasoned foundation that tastes like you simmered it all day. It introduces a subtle warmth and complex profile that elevates this humble soup from good to absolutely unforgettable – all with virtually no extra effort on your part. Simply open the can and add it in!

Essential Chicken Tortilla Soup Ingredients

Crafting the perfect Instant Pot Chicken Tortilla Soup starts with selecting the right ingredients. Here’s a closer look at what you’ll need and some tips for the best results:

  • Olive Oil: A foundational ingredient for sautéing the aromatics and building initial flavor.
  • Yellow Onion: Diced, it adds a sweet and pungent depth to the soup base.
  • Minced Garlic: Essential for aromatic flavor. Freshly minced garlic provides the best taste.
  • Spices (Cumin, Paprika, Chili Powder): These create the classic Southwestern flavor profile. We recommend a mild chili powder like McCormick® to control the heat, but feel free to adjust to your preference.
  • Tomato Paste: Adds a concentrated umami richness and helps thicken the broth slightly.
  • Diced Tomatoes: Fire-roasted diced tomatoes are highly recommended for their smoky depth, but plain diced or even whole canned tomatoes (crushed by hand) work beautifully.
  • Chicken: For unparalleled tenderness and flavor, boneless, skinless chicken thighs are strongly recommended. They remain juicy and shred easily after pressure cooking. Chicken breasts can be used as an alternative, but be mindful of cooking times to prevent them from drying out.
  • Red Enchilada Sauce: This is our “secret ingredient.” Brands vary greatly in heat and flavor. We love and suggest Old El Paso® mild red enchilada sauce for a balanced, family-friendly spice level. Always taste your sauce first if trying a new brand!
  • Diced Green Chiles: Add a mild, tangy, and slightly smoky flavor without adding significant heat.
  • Black Beans: Canned black beans, thoroughly drained and rinsed, add protein, fiber, and a creamy texture.
  • Corn: Canned corn, undrained (especially fire-roasted if available), contributes sweetness and a pleasant textural contrast.
  • Chicken Stock: A high-quality chicken stock is crucial for a rich, flavorful broth. Using a good stock reduces the need for excessive additional seasonings. We often opt for Swanson’s® chicken stock.
  • Bay Leaf: Infuses subtle, savory notes into the soup as it cooks. Remember to remove it before serving.
  • Salt and Pepper: To season the soup to perfection. Always taste and adjust at the end.
  • Fresh Cilantro & Lime Juice: Added at the end, these provide brightness and a fresh, zesty finish that truly elevates the soup. Highly recommended!

How To Make Instant Pot Chicken Tortilla Soup

Making this chicken tortilla soup in your Instant Pot is incredibly straightforward. Follow these steps for a perfect meal every time:

  1. Prepare Chicken: Trim any excess fat from your chicken. If using chicken breasts, cut each into 2-3 large pieces to ensure even cooking and easier shredding later.
  2. Sauté Aromatics: Turn on your Instant Pot and select the “Sauté” function. Add olive oil and sauté the diced onion for 4-6 minutes until it softens and begins to turn golden. Stir in the minced garlic and sauté for another 30 seconds to 1 minute until fragrant.
  3. Build the Flavor Base: Add the ground cumin, paprika, chili powder, and tomato paste to the pot. Sauté for 1-2 minutes, stirring constantly, until the spices are fragrant and slightly darkened. This step is crucial for deepening the soup’s flavor.
  4. Deglaze with Tomatoes: Pour in the diced tomatoes. Use a wooden spoon or spatula to scrape the bottom of the pot, releasing any browned bits. This prevents a “burn” warning and adds extra flavor.
  5. Combine Remaining Ingredients: Add the prepared chicken, red enchilada sauce, diced green chiles, drained and rinsed black beans, undrained corn, chicken stock, and bay leaf to the Instant Pot. Season generously with salt and pepper to taste (approximately 1 teaspoon of salt and 1/2 teaspoon of pepper is a good starting point).
  6. Pressure Cook: Secure the lid, making sure the sealing valve is in the “Sealing” position. Select the “Manual” or “Pressure Cook” setting on High pressure and set the timer for 7 minutes.
  7. Natural Pressure Release: Once the cooking cycle is complete, allow the pressure to naturally release for 10-15 minutes. For chicken breasts, 10 minutes is usually sufficient. For chicken thighs, aim for 15 minutes to ensure maximum tenderness. After the natural release, carefully turn the sealing valve to the “Venting” position to quick release any remaining pressure.
  8. Shred Chicken and Finish: Carefully remove the chicken from the Instant Pot and transfer it to a separate bowl. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the pot. Stir in the fresh cilantro and 2 tablespoons of fresh lime juice. Taste the soup and adjust seasonings (salt, pepper, or more lime juice) as needed. Discard the bay leaf before serving.
  9. Serve with Toppings: Ladle the warm soup into bowls and serve immediately with your favorite toppings!

Quick Tip: Perfecting Pressure Release for Tender Chicken

When cooking chicken in the Instant Pot, patience during the pressure release is key to achieving perfectly tender, juicy results. A rapid change in temperature and pressure can cause chicken to seize up and become tough. To avoid this, always allow the pressure to release naturally for at least 10 minutes (preferably 15 minutes, especially for chicken thighs) before manually opening the steam release valve. This gradual decrease in pressure ensures the chicken remains succulent and easy to shred.

Irresistible Instant Pot Chicken Tortilla Soup Toppings

While this soup is undeniably delicious on its own, the toppings are what truly make it an unforgettable experience. They add texture, flavor, and a personalized touch. Here are some of our favorite topping ideas:

  • Crispy Tortilla Strips: A non-negotiable! The crunch of tortilla strips (store-bought or homemade) adds essential texture. You can find pre-packaged strips near croutons and salad toppings, or easily make your own.
  • Shredded Cheese: A generous sprinkle of shredded cheese, such as a Mexican blend, sharp Cheddar, or Monterey Jack, melts beautifully into the warm soup, adding creaminess and savory depth.
  • Fresh Lime Wedges: A squeeze of fresh lime juice over each bowl brightens all the flavors and adds a refreshing zesty kick. It’s a simple addition that makes a big difference.
  • Fresh Cilantro: For cilantro lovers, an extra handful of freshly chopped cilantro enhances the herbaceous freshness of the soup.
  • Creamy Avocado: Cubed or sliced ripe avocado adds a luxurious creaminess and healthy fats. Alternatively, a dollop of fresh guacamole is also fantastic!
  • Sour Cream or Greek Yogurt: A dollop of sour cream or Greek yogurt provides a cool, tangy contrast that also helps to mellow any spice. For a lighter option, use fat-free or low-fat varieties without sacrificing richness.
  • Jalapeño Slices: For an extra kick of heat, add thinly sliced fresh or pickled jalapeños.
  • Hot Sauce: A dash of your favorite hot sauce can boost the spice level and add another layer of flavor.

Variations: Homemade Baked Tortilla Strips

Elevate your soup experience by making your own crispy tortilla strips! It’s surprisingly easy and adds a wonderful homemade touch:

To make your own baked tortilla strips: Stack 2-3 corn or flour tortillas and slice them in half. Then, cut them crosswise into 1/2-inch strips. Spread the strips in an even layer on a parchment-paper-lined baking sheet. Drizzle with a little olive oil, season with a pinch of salt and pepper, and toss to coat. Bake in a preheated oven at 375°F (190°C) for about 7-10 minutes, flipping halfway through, until they are golden brown and perfectly crisp. Keep a close eye on them, as they can burn quickly!

Adjusting the Spice Level of Your Instant Pot Chicken Tortilla Soup

The spice level of your Instant Pot Chicken Tortilla Soup can be easily customized to suit your palate. Using a mild red enchilada sauce (like Old El Paso) and a mild chili powder (such as McCormick), we consider this soup to have a pleasant medium spice. It offers a warmth that is inviting without being overpowering.

If you prefer a milder soup, you can reduce the amount of chili powder, or even omit it entirely. Be aware that removing chili powder might subtly lessen the overall depth of flavor, so consider balancing it with a pinch more cumin or paprika if you do. For those who enjoy a spicier kick, feel free to add an extra teaspoon or two of chili powder, a pinch of cayenne pepper, or even some finely diced jalapeños or serrano peppers during the sautéing stage. Remember that toppings like cheese, sour cream, and avocado naturally help to cool down the heat, making them perfect additions for balancing out a spicier bowl.

Storage and Meal Prep Tips

This Instant Pot Chicken Tortilla Soup is fantastic for meal prep and stores beautifully, allowing you to enjoy delicious leftovers for days!

Enjoying Leftovers

  • Refrigeration: Store any leftover Instant Pot Chicken Tortilla Soup (without toppings) in an airtight container in the fridge for 4-6 days. This makes it an ideal make-ahead meal for busy workweeks.
  • Reheating: To reheat, gently warm the soup in a pot over low heat on the stovetop until heated through. Alternatively, you can reheat individual servings in the microwave, making sure to cover the bowl to prevent any splatters.
  • Freezing: This soup also freezes exceptionally well for longer storage! Freeze the soup (again, without toppings) in freezer-safe containers or heavy-duty freezer bags for up to 3 months. Ensure the soup is completely cooled before freezing.
  • Thawing: For best results, thaw frozen soup in the refrigerator overnight. You can also quickly thaw it using the defrost setting on your microwave or gently on the stovetop over low heat. Here are some excellent methods for thawing frozen soup effectively and safely.

Frequently Asked Questions (FAQs)

Can I use frozen chicken?

Yes, you can use frozen boneless, skinless chicken breasts or thighs directly in the Instant Pot. You will need to increase the pressure cooking time slightly. For frozen chicken, set the Instant Pot to High Pressure for 10-12 minutes, followed by a 15-minute natural pressure release. Make sure the chicken is not frozen in a solid block for best results.

Can I make this soup vegetarian?

Absolutely! To make a delicious vegetarian tortilla soup, omit the chicken and use vegetable broth instead of chicken stock. You can add extra black beans, corn, or even some diced sweet potatoes or bell peppers to make it more hearty. Consider adding a can of drained and rinsed chickpeas for additional protein.

What if I don’t have an Instant Pot?

While this recipe is optimized for the Instant Pot, you can easily adapt it for a slow cooker. Follow steps 1-2 (sautéing the aromatics) in a separate pot on the stovetop. Then, transfer all ingredients to your slow cooker. Cover and cook on HIGH for 3-5 hours or on LOW for 5-7 hours, or until the chicken is cooked through and easily shreds. Follow the remaining steps for shredding chicken and adding finishing touches.

How can I make the soup thicker?

If you prefer a thicker soup, you have a few options:

  1. After shredding the chicken, remove about 1-2 cups of the soup (liquid and some solids) and blend it with an immersion blender or in a regular blender until smooth, then return it to the pot.
  2. Make a cornstarch slurry: Mix 1 tablespoon of cornstarch with 2 tablespoons of cold water. Stir this mixture into the simmering soup and cook for a few minutes until it thickens.
  3. Add a spoonful of refried beans to the soup; it will add flavor and naturally thicken the broth.

Equipment

  • Instant Pot or slow cooker

Ingredients

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced (about 1-1/2 cups)
  • 1-1/2 teaspoons minced garlic (3 cloves)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 teaspoons chili powder (see Note 1)
  • 2 tablespoons tomato paste
  • 1 (14.5-ounce) can diced tomatoes (fire-roasted or plain) or whole canned tomatoes
  • 1 pound (16 ounces) boneless, skinless chicken thighs or breasts (see Note 2)
  • 1 (10-ounce) can red enchilada sauce (see Note 3)
  • 1 (4-ounce) can diced green chiles
  • 1 (15.25-ounce) can black beans, drained and rinsed
  • 1 (15.25-ounce) can corn, undrained (fire-roasted or plain)
  • 1 (32-ounce) container chicken stock or broth (see Note 4)
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 to 3 tablespoons finely chopped cilantro (optional but recommended!)
  • 1 lime (optional but recommended!)
  • Toppings as desired (see Note 5)

Instructions

  1. Trim fat from the chicken. If using breasts, cut each one into 2–3 large pieces. Turn Instant Pot on by pressing the “Sauté” button to begin warming it up.
  2. Once the Instant Pot is on the sauté function, add the olive oil and sauté the diced onion for 4–6 minutes or until onion starts to soften and turn golden. Add minced garlic and sauté for another 30 seconds to a minute or until fragrant. Add in the cumin, paprika, chili powder, and tomato paste. Sauté for 1–2 minutes or until slightly darkened and very fragrant (but nothing should be burning!). Add diced tomatoes and continue to sauté, scraping the bottom to release any browned bits (this is important to avoid a burn warning).
  3. Add prepared chicken to the Instant Pot along with the red enchilada sauce, diced green chiles, black beans, corn, chicken stock, and bay leaf. Season to taste with salt and pepper; we recommend starting with 1 teaspoon salt and 1/2 teaspoon pepper. Secure the lid, making sure to seal, and cook on high pressure (manually select) for 7 minutes. Let the pressure naturally release for 10–15 minutes (10 minutes for breasts, 15 for thighs) before using quick release to release the remaining pressure. Remove the chicken and transfer to a separate bowl. Using two forks, shred chicken, then return to the pot along with the cilantro and 2 tablespoons lime juice. Taste and adjust any seasonings (salt/pepper) to taste. Remove and discard the bay leaf.
  4. Serve bowls of soup with your favorite toppings. We love freshly shredded cheese, a large spoonful of sour cream, additional cilantro, chopped avocado or guacamole, fresh lime, and plenty of tortilla strips!
  5. Slow Cooker Instructions: Follow steps 1–2. Sauté ingredients in your slow cooker base if it has that function; otherwise, sauté in a separate pot on the stove, then add everything to the slow cooker. Cover and cook for 3–5 hours on high or 5–7 hours on low or until the chicken is cooked through, tender, and easily shreds. Remove the chicken and transfer to a separate bowl. Using two forks, shred chicken, then return to the pot along with the cilantro and 2 tablespoons lime juice. Taste and adjust any seasonings (salt/pepper) to taste. Remove and discard the bay leaf. Follow step 4 for serving. Enjoy!

Recipe Notes

Note 1: Chili Powder is not to be confused with chilli powder (which is very hot). We use McCormick, which is pretty mild. Adjust to your heat preference.

Note 2: While chicken breasts will work, we highly recommend boneless, skinless chicken thighs. Thigh meat becomes exceptionally tender and juicy in the pressure cooker and shreds quickly and easily. It’s also more forgiving if cooked longer; chicken breasts tend to dry out if overcooked.

Note 3: Enchilada sauce can vary greatly in heat and flavor from brand to brand. We love and recommend Old El Paso® mild red enchilada sauce (not sponsored) for its balanced flavor. If you aren’t able to find this brand, we recommend tasting the enchilada sauce first to ensure it isn’t too spicy for your preference.

Note 4: A high-quality, flavorful chicken stock adds loads of depth and allows us to cut down on extra spices or additions. We recommend Swanson’s® chicken stock for consistent results.

Note 5: Toppings: Essential toppings include crispy tortilla strips, freshly squeezed lime juice, freshly shredded sharp Cheddar cheese, ripe avocados, and fresh cilantro. While this soup is tasty straight out of the pot, the toppings truly seal the deal and elevate the entire experience!

Nutrition Note: Nutrition information is calculated without toppings.

Storage: Store this soup (without toppings) in an airtight container in the fridge for 4–6 days. Reheat on the stove over low heat or in the microwave. It also freezes well for up to 3 months. Here are some best methods for thawing frozen soup.
