The Salad I Couldn’t Stop Eating in Israel!

It is satisfying to a salad that is simple, fresh, and made with ingredients I almost always have on hand, and this Israeli salad is exactly that. It’s just chopped cucumbers, tomatoes, parsley, and a quick lemon dressing, but when everything is finely chopped and tossed together it turns into something really special and seriously satisfying.

It is satisfying to this salad as an straightforward side, but it’s also great spooned over grilled chicken or fish almost like a fresh, chunky salsa. It’s bright, refreshing, and goes with just about everything. Plus, it’s so straightforward to make!
