Beef Mixture:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 2 teaspoons finely minced garlic (2–3 cloves)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground coriander
  • 2 teaspoons beef bouillon powder
  • 1-1/2 teaspoons ground cumin
  • 1-1/2 teaspoons paprika
  • 1/4 teaspoon pepper
  • 1 pound lean ground beef (93/7 recommended)
  • 1/2 medium head iceberg lettuce, very thinly sliced
  • 1/4 thinly sliced red onion
  • 8 to 12 mini naan flatbreads, plus cooking spray (Stonefire naan is a great choice)
  • Optional serving suggestions: fresh cilantro, fresh mint, fresh lemon, 1 large avocado

Creamy Herb Sauce (Raita-inspired):

  • 1/2 cup plain Greek yogurt (full-fat is best, like Greek Gods)
  • 1/2 cup finely chopped English cucumber or Persian cucumber
  • 2 tablespoons chopped cilantro
  • 2 teaspoons thinly sliced green onions
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon salt

Instructions

  1. Prepare the Beef: Heat olive oil in a large skillet over medium-high heat. Add the finely diced yellow onion and cook, stirring occasionally, until it turns golden, about 4–5 minutes. Reduce the heat to medium. Add the minced garlic and all the beef seasonings: salt, coriander, beef bouillon powder, cumin, paprika, and pepper. Stir constantly until fragrant, about 1–2 minutes. Push the seasoned onion mixture to one side of the skillet. Increase the heat to high. Add the ground beef to the cleared section of the pan. Let it stand undisturbed for about 30 seconds to develop a seared crust. Flip the beef and let it stand for another 30 seconds. Continue to cook, breaking up the beef with a spoon, until it is thoroughly browned, about 7–9 more minutes. Remove from heat, taste, and adjust seasonings (adding more salt and pepper as needed).
  2. Make the Sauce: While the beef cooks, combine all the sauce ingredients (Greek yogurt, chopped cucumber, cilantro, green onions, cumin, coriander, and salt) in a medium bowl. Stir until all ingredients are well combined. Refrigerate until ready to use. Give it a good stir again just before adding it to the naan.
  3. Prep the Fresh Toppings: Thinly slice the iceberg lettuce. Wash and thoroughly dry it (a salad spinner works wonders here). Set aside. Thinly slice the red onion and set aside.
  4. Char the Naan: Lightly spray both sides of each naan flatbread with cooking spray. If using a gas stovetop, “grill” the naan directly over an open flame until slightly charred and warm, about 10–20 seconds per side (refer to the oven method in the notes if you don’t have a gas stove).
