This one-pot Pesto Chicken Tortellini is one of my family’s go-to meals. It is satisfying to that it’s a one-pot, flavorful, and kid-friendly meal! My kids beg for me to make this recipe and I never complain, because it’s so straightforward to make. It is satisfying to all the good ingredients they’re getting – lean protein, a fresh and light pasta sauce, and veggies. Plus, only one pot to wash? Yes, please.

Ingredients In Pesto Chicken Tortellini

With less than 10 ingredients, this dish is packed with flavorful, feel-good ingredients. Buitoni® three-cheese tortellini and their pesto basil sauce form the base.

  • It includes lean protein from chicken breasts seasoned with paprika, Italian seasoning, salt, and pepper.
  • Sun-dried tomatoes add a pop of flavor. Sometimes, fresh cherry tomatoes go on top for even more veggies.
  • Finish it off with a few tablespoons of oil from the sun-dried tomatoes, fresh basil, and a sprinkle of Parmesan, if desired.

How To Make Pesto Chicken Tortellini

  1. Cook tortellini: Use the same pot later to cut down on dishes.
  2. Season and prep chicken: Drying the chicken helps it brown better in the pan.
  3. Cook chicken: If the pot gets dry, add a bit more oil from the sun-dried tomatoes.
  4. Add sun-dried tomatoes: Chop tomatoes before starting to keep things moving quickly.
  5. Add tortellini: Stir gently so the tortellini don’t break apart.
  6. Mix in pesto: You can also add red pepper flakes for a little heat.
