AUTHOR’s NOTE

The Dinner That Made Me Like Camping!

I’ve never been much of a camper, but I’ve always been a foodie, so camping never really excited me. I always associated it with food that… well, wasn’t the best. But after agreeing to a family camping trip, I was determined to change that.

Inspired by a reliable hobo foil packets, I created these Sausage and Potato Foil Packs—and let me tell you, they were a total hit! They were so satisfying, I’d even go camping again just to enjoy them fresh off the campfire.

The secret to extra flavor that I discovered on the camping trip? Pack some Tabasco sauce and drizzle it on at the end. It’s irresistibly good!

All the veggies, sausages, and seasonings added to a bowl to toss together.

Ingredients In Sausage And Potato Foil Packs

  • Smoked sausage: I use turkey sausage; it’s pre-cooked and taste delish!
  • Onion & bell pepper: Any color of bell pepper works—use your favorite or mix a few!
  • Baby red potatoes: Cut them small so they cook through fast.
  • Seasoning: Season well so the veggies and potatoes aren’t bland.
  • Hot sauce: Pack extra to drizzle on at the end for even more flavor!
  • Olive oil: Toss everything really well so the oil coats every piece.
  • Sharp Cheddar cheese: Freshly shredded cheese melts better than bagged.
  • Chopped cilantro: Add it after cooking so it stays bright and tasty.

Tips For Success

  • Cook these sausage and potato foil packs on a hot grill (525–550°F). At this heat, they can cook in as little as 15 minutes, depending on your grill and veggie size.
  • Close the foil packs tight so they don’t leak when you flip them.
  • Mix the seasoning and oil really well so everything gets coated.
  • Use strong foil for the grill—it works best. Don’t double-wrap the packs; more foil makes them cook slower.

Storage
