Once tender, carefully remove the softened fat cap from the pork (it should pull off effortlessly) and remove and discard the bone. Transfer the shredded pork from the slow cooker to a large bowl. (You can enjoy the cooked onions if desired, otherwise discard all other remaining liquids in the slow cooker.)
