Blue Cheese Dressing Recipe From a Restaurant Famous for It!

This recipe has been with me for years. I first learned it while working at a restaurant known for its wedge salads, rich blue cheese dressing, and crème brûlée. Their blue cheese dressing was legendary. People ordered extra on the side and asked for it constantly.

The original recipe made a massive batch meant for restaurant service, so when I left, I knew I wanted a version that actually made sense at home. I spent time scaling it down, testing ratios, and tweaking the seasoning until it tasted exactly like I remembered.

Now this is the version I make on repeat. It’s the one I keep in my fridge for salads, wings, burgers, and dipping veggies straight from the tray.

Dressing Ingredients

IngredientSwaps & Tips
Blue cheeseUse a good, chunky blue cheese. Roquefort, Gorgonzola, or Stilton all work great.
ButtermilkRegular milk won’t give the same result. You can make your own with milk and lemon if needed.
MayonnaiseUse a good quality mayo for the best flavor and texture.
Sour creamGreek yogurt works in a pinch if that’s what you have.
White wine vinegarApple cider vinegar also works well.
Lemon juiceFresh lemon is best, but bottled works if needed. A citrus juicer makes it straightforward.

Quick Tip

How To Make Blue Cheese Dressing

To make Blue Cheese Dressing, mash up crumbled blue cheese and buttermilk with a fork until they look like large-curd cottage cheese.
Mix in mayonnaise, sour cream, white wine vinegar, garlic powder, sugar, lemon juice, and salt and pepper.
Stir until well combined and adjust the seasonings to taste.

For a creamier texture, blend all ingredients together.

Storage

Leftovers?

Blue Cheese Dressing can be stored in a tight container in the refrigerator for up to one week. You may want to stir it before using, as the ingredients can split over time.

If the dressing is too thick, add a little buttermilk to loosen it. If it’s too thin, mix in more crumbled blue cheese or mayo to get the right texture.
