Author’s Notes
My reliable Bowl of Overnight Oats
In more than a decade of sharing recipes online, I’ve learned that people tend to have strong opinions about oatmeal. Some love it thick enough to hold its shape, while others prefer it soft, creamy, and almost pudding-like.
I’m firmly in the creamy camp, and that’s exactly what you’ll get with this recipe. These protein overnight oats have a loose, spoonable consistency with a noticeable chia pudding texture. Stirring in Greek yogurt or nut butter thickens them up beautifully, or you can reduce the chia seeds slightly for a more oat-forward texture.
All that said, this is my absolute favorite protein overnight oats recipe and a breakfast I’ve had on repeat for the past few months. I’m fully obsessed with the flavor, the creamy texture, and all the toppings. Whew, it’s good!

Ingredients In My Protein Overnight Oats Recipe
| Ingredient | Let’s Chat About It |
|---|---|
| Vanilla protein powder and almond milk | Use a protein powder you genuinely enjoy since its flavor comes through strongly. Just Ingredients and Clean Simple Eats are my favorites here. Adjust the sweetener depending on how sweet your protein powder is. |
| Old-fashioned oats and chia seeds | Stick with old-fashioned oats, not quick or steel-cut. Reduce the chia seeds slightly for a more oat-forward texture. |
| Maple syrup, vanilla, cinnamon, and salt | Adjust the maple syrup to taste. The cinnamon is skippable but adds a nice touch, and a small pinch of salt helps balance the sweetness. |
| Greek yogurt and nut butter | Add these to your protein overnight oats recipe right before serving to make the oats thicker, creamier, and more filling. |
| Berries, granola, chopped nuts, and extra maple syrup | Add these just before eating so the fruit stays fresh and the crunchy toppings keep their texture. |

How To Get Your reliable Texture
This protein overnight oats recipe is intentionally creamy. Keep in mind that the final consistency can vary slightly depending on the protein powder, milk, oats, and chia seeds you use.
For thicker oats, start with a little less milk or mix in Greek yogurt or nut butter before serving.
For a more oat-forward texture, slightly reduce the amount of chia seeds. If the oats become thicker than you like after chilling, simply mix in another splash of milk. Be sure to stir the oats thoroughly before serving since some of the chia seeds may settle as the mixture chills.
Storage
Store the oat mixture in an airtight container in the refrigerator and enjoy it within 3 days. Keep the toppings separate and add them to individual servings right before eating for the best texture.
