Cashew Chicken Wraps make the reliable straightforward meal with tender chicken, crisp veggies, and a satisfying creamy sauce.
Author’s Notes
Goodbye Boring Lunches!
I’m a sandwich and wrap girl through and through. It’s the lunch I turn to most days, and I’m always switching it up. I rotate through all kinds: chicken salad, tuna salad, egg salad, chickpea salad…whatever I’m feeling that week. And when I’m not prepared? Peanut butter and honey always saves the day.
Lately though, this wrap keeps stealing the spotlight. I can’t get enough of it. There’s a little veggie chopping in the beginning, but once that’s done, everything stays fresh and crisp for days. It’s been the easiest lunch to reach for all week long.
When I’m making it for the week, I keep the veggies in one container and the dressing and chicken in another. It keeps everything tasting fresh and makes assembling each wrap super quick.

Cashew Chicken Wrap Ingredients
| Ingredient | Tip or Swap |
|---|---|
| Cooked Chicken | Use 1 pound of raw chicken, seasoned and cooked. Shred or chop. Rotisserie chicken works great for a shortcut! |
| Red/Purple Cabbage | I like red cabbage best, but pre-shredded green cabbage is a great time-saver if needed. |
| Matchstick Carrots | Grab pre-cut to save time, or (for better flavor) shred whole carrots with a box grater. |
| Snap Peas | Thinly slice for crunch. Not a fan? Use shelled edamame instead. |
| Red Bell Pepper | About half a pepper is all you need. Dice the rest for salads, stir-fry, or soup. |
| Cashews | Dry-roasted and lightly salted cashews add flavor without any extra work! |

skippable Wrap Ingredients (That It is satisfying to!)
- Avocado: Adds creamy texture; use a ripe one for best flavor/texture.
- Cilantro: Brings a nice, fresh flavor to these cashew chicken wraps.
- Wonton Strips: Found near salad toppings; adds such a fun crunch!

How To Meal Prep Cashew Chicken Wraps
Keep tortillas in their original packaging. Wrap lettuce in a dry paper towel and store in a sealed bag or container in the fridge. Keep the filling, dressing, and toppings in separate containers. Toss the filling with dressing just before assembling to keep everything fresh and avoid sogginess.
